21 Day Fix Cauliflower Cheeseburger Casserole
My oldest son has been very picky with his veggies and I have been trying to figure out what I can make our family that includes protein and veggies without him complaining and putting up a fight. True story moms, I go through it too! But I refuse to let his pickiness stop us from eating healthy! We simply find a way to get creative so we can all enjoy our dinner together! Tonight I made a recipe that one of my challengers put in our group called 21 Day Fix Cauliflower Cheeseburger Casserole.
Ingredients:
- 1 Pound Ground turkey or lean ground beef (I do half and half)
- 4 Cups Cauliflower florets or riced cauliflower
- 4 Teaspoons Wheat flour
- 4 Teaspoons Organic grass fed butter
- 1 Cup Unsweetened almond milk
- 1 1/3 Cup shredded cheese
- Sea salt/Himalayan salt and pepper to taste
Directions:
- Spray casserole dish with cooking spray , and preheat oven to 350.
- In a large skillet, cook meat until fully cooked. Drain the excess fat
place meat into casserole dish. - Steam the cauliflower for about 6-8 minutes, or until tender on the outside. If you riced your cauliflower, I suggest throwing in skillet on low heat and sauté it to try to remove excess water.
- In your skillet, melt the butter over medium heat and sprinkle in the flour whisk together.
- Slowly whisk in the almond milk , continue until mixture comes to a boil and begins to thicken.
- Once thickened, remove sauce from heat and stir in 1 cup of shredded cheddar cheese until fully melted, adding salt to taste.
- Combine the meat, cauliflower, and cheese sauce in the casserole dish and mix well. Sprinkle with remaining cheese and bake at 350 for 15 minutes or until cheese is bubbly and beginning to brown.
