Who ever thought a training for work could be so much fun?! This tells you right here, us Beachbody coaches have so much to be thankful for!  We are seriously treated like gold!! I cannot remember the last time my nursing job was so appreciative of their workers, so this was taken to a new level!!

Summit was at Vegas this year and was from Thursday to Sunday.  I went Tuesday to have a little relaxing and shopping before all the good stuff started!!

Wednesday was our first big day! We had an Elite celebration and I was in awe when I got to the reception/cocktail party! We had first chance to purchase from the CORE which is the store with all the Beachbody swag!! I was able to bring a guest with me, so I chose my cousin Michael, who was my very first diamond! This was seriously the most memorable night for me… I remember walking in and seeing that star with my name on it, and then Tony Horton was standing right there!! I was handed a gift and asked to sign my star! Nothing like feeling like a celebrity for a day right?!?  It was so nice to get pictures with everyone and just meet people you see all the time on Facebook, but never have the opportunity to talk face to face!

Thursday, I took a leap of faith and put myself in a Beachbody Classic Bikini Competition!! As scary as it was, I know I need the experience since I am prepping for a FIGURE NPC show in Oct and I need to learn some posing!

I have done this ALL just by home DVD programs and drinking Shakeology!! GO ME!!!!

It didn’t matter how busy we were, this girl was with me to work out and run around Vegas like crazy people!!  We ran for 45 min up and down steps, in and out of crowds, and this was the best workout I had outside!!!! So much fun!!

 One of my favorite sessions at summit was Daren Hardy, writer of Compound Effect which was my first Personal Development book I ever read! How awesome it was to actually see him in person!!
He actually was even more impressive than in his book and his book is amazing!!
He talks about failure and how you cannot let failure be a characteristic of who you are… Failure happens to everyone, even the most successful people! His childhood was full of failures, but that was only a perfect way to create who he is today- a successful person!  Turning failure into fun is how you over come your obstacles and weaknesses and turn them into strengths that one day you can look back and say “I DID IT” and “IM STRONGER BECAUSE OF THAT!”

Friday evening was our Star Diamond reception.  I actually had a contest for my coaches for whoever earned the most success club points in a two week period would earn a date with me to the party! My coach Michael won! It was so awesome walking into Chalene calling us over for a pic!

 Saturday was another general session for all the coaches! We had lots of recognition and people on stage talking about their success as a coach and their stories behind their journey! It was so inspiring and really makes you think that anything is possible if you want something bad enough!
 Saturday morning, I was on stage for the first time in front of over 9,000 people to be recognized as an Elite coach! This is seriously an amazing feeling!! Hard work truly pays off!!

21 Day Fix Week 3 exercise/meal plan

I felt like it was yesterday that I was patiently waiting for my 21 day fix to arrive at my doorstep, now I’m already into the 3rd week!! Its crazy!!  So as I have my story posted here, I am going to be totally honest.. Yes, I am a fitness coach, but I am also human,.. I totally was discouraged by looking at the scale even in the first week.. I am so mad at myself for not sticking with the complete guide for a few days, but I realized how good I did feel

I was less bloated, not hungry as much, and was able to focus on the important things like getting in my water intake and keeping myself busy activity wise, rather than always on eating! Yes, I eat all the time!!  But I am by no means over weight, its just I tend to be obsessive about food.. Using the 21 day fix is really helping me with portion control and knowing when to eat! Although I took 2 days off, I was still able to use portion control, which was great! I have a feeling if I would have stuck with it I would have started to see results on the scale, but at the same time I need to realize I am at a low weight for me and my body type already.. I see my abs, I have definition,
so I know there will not be a significant drop in pounds, which is why Im back at it!! I am only on day 2 of week three and feel awesome!! 
I think this is a great way for me and my personal issues to get over focusing on the scale because I know how good I feel without looking at that scale.. It means almost nothing anymore to me. So I will continue this journey and enjoy every minute!!
I will say now that I am on week 3, there is an option to kick your workouts up and double them, which I am since I did not completely follow last week.. I have done 2 days of double workouts and I LOVE IT!!! I feel so strong and I am burning calories!!

If you have not seen or heard much about the 21 day fix, you have a nutrition guide to follow and this guide gives you color coded options for each food group.. You get the colored containers with the program to help you portion size every meal you intake! 
This was a meal prep day and you will notice the blue, green, red, and purple containers on the right and at the bottom of the picture.. those are the containers you get and the others are mine, but already portioned out according to each food group.

I love that I can include my family in this too! I have my kids working out with me (they hop around but they love it), and they want to eat want mommy is eating! It doesn’t get much better than that!

On the last 3 days, I will be doing the 3 day quick fix, which is a very strict plan to help you get the most of your results and change your body up some! Tricking your body is one of the best ways to get off a plateau.

One goal that I change every so often is my goal body.  I set small goals to reach my larger goals in the long run.  I have reached my goal weight, and maintained for a while (about a year), but want to change things up.  I really want to tone, so in order to lose the last 5 or so pounds, I need a strict nutrition regimen, along with a workout program that works well for me.

Since I am a mommy of 2 amazing little boys, a wife, and a nurse, I need to manage to make time for my health and fitness goals as well! What better way than picking a program that is giving my home DVD’s that are 30 min a day, and a meal plan that I can understand and live off of! NO DIETS FOR ME! I do not believe in them and feel you should the way you can live off of forever! It’s a LIFESTYLE right?!
The 21 day Fix is literally 21 days long, but you may repeat as needed, and includes the focus on both nutrition and exercise! It is all about portion control and self control! I know for me personally, having a specific regimen that tells me what to do makes my life so much easier! Not including how convenient the home DVD’s are.. I no longer have to pull my kids out of the house to drive to a sitter so I can go to the gym!

Yesterday was day 1! Sunday I had all of my food prepped and ready to go for the week! I had made my meal plan ahead of time, went to the grocery store and got all my goodies, and cooked everything! I spend about 3-4 hours total getting all my meals ready for the week. It sounds like a long time, but I save lots of time during the week and lots of money by sticking to the same foods every week.. I like to keep things simple.. Its easy to follow and easy to remember what I am eating every day.  Here is what my meal plan looks like this week!

And then the prepping!! I honestly LOVE to cook now! It use to be something I felt was a waste of time and was not good at it… Until I made goals.  I knew eating out at restaurants was not healthy, no matter where you went! Foods are cooked with so many extra calories its crazy! I decided, I am not wasting my calories that way.. I want to reach my goal and now that I cook for myself, I enjoy it! I also think I enjoy it more because I know its the best thing for me and my family!

They looked extremely small when I took them out of the box and all I thought to myself was “How in the world am I going to be full off these portions!?”

As I was cooking my food and actually putting what I thought was a portion size in the container, I was pleasantly surprised that I was pretty much on with the portions! So for example, one of my current snacks is 3 hard boiled eggs and an apple.. That was a meal on here, but looking at the containers, I didn’t think my normal portions would fit and they did!

I am still eating lots of my every day foods- Chicken, fish, salmon, stir fry veggies, eggs, Quinoa and brown rice!

I think the hardest part is not using additives to cook with.. So I am only using EVOO twice daily. No condiments on my food either! That is tough because I am a HUGE condiments LOVER!! But that may be the key for me to lose this last 5 pounds! We know its the hardest to lose the last couple!

 Day 1 went well!! I was a little distracted without having my E&E to drink ( beach body’s Pre workout formula with natural flavors and vitamins) but I made it through!
I am drinking 1 gallon of water a day.. YES gallon!! It is in the books and I am going by it! Its a great way to cleanse your body and take away all that extra bloating that is not needed!!
In order for me to enjoy an entire gallon, I am using lemon in my water to help me out! Makes it so much fun when I am drinking something other than plain water all the time lol! Nothing like spicing it up with some fresh fruit also!!
This may sound silly but one way I am getting my water in is having chugging contests with my friends! Yes, even at my nursing job! We chug water to make sure we are ahead of the game! NO SLACKING HERE! 🙂

How often am I eating?
During the 21 day Fix, I am eating every 2 hours.  Since I wake up so early and do not go to bed right when I should, I try to make it every 2.5 hours, which works for me much better!

What do I do when I get hungry and its not time to eat?
I am not going to lie, I have been hungry a couple times prior to the time I am suppose to eat.. So I drink Green tea! Nothing in it, just plain Green Tea! I use Zen and it really helps me, also it helps cleanse and take away bloating!

Day 2 today went really well! It was easier than yesterday, and I am enjoying my meals, and my workouts! I love that you still are lifting weights, but are also incorporating your own body weight into your exercises! I got my water in … YES the whole GALLON.. with the help of another chugging contest!!! 😉
I already feel less bloated and like I can really tell when I am actually hungry vs emotional hunger!

 I am going to bed and ready to take on another day… another day closer to reaching my ULTIMATE goals!! WOO HOO!! Oh p.s. Although I would love to lose 5 pounds, I also understand the scale is not everything! I will be happy with more definition! 🙂 Good night and get ready for a yummy recipe to be posted tomorrow!!

instance, I had 1 green pepper, 1 cucumber, kalamata olives, feta cheese,

Buffalo Chicken Spaghetti Squash Casserole

Buffalo Chicken Spaghetti Squash Casserole

Ingredients:

  • 2 small-to-medium spaghetti squash
  • 1 (8oz) package of cream cheese
  • 1/2 cup Frank’s Hot Sauce
  • 1/2 cup ranch dressing
  • 1 large chicken breast or 2 medium chicken breast, cooked and shredded
  • 2 cups shredded cheddar cheese
For Ranch dressing:
1 dry Ranch Packet Mix (I use Hidden Valley)
1 cup Plain Greek Yogurt
1/2 skim milk
Directions:

  1. Preheat oven to 400 degrees.
  2. Cut Squash in half length wise and put on plate upside down (round part up) and cook in microwave for approx 12 min or until soft inside
  3. Allow the spaghetti squash to cool for 5-10 minutes.
  4. While you are letting the spaghetti squash cool, prepare the buffalo chicken by place the cream cheese and the hot sauce in a large saucepan. Allow the cream cheese to completely melt.

5. Add in the ranch dressing and chicken breasts.
6. Scoop out the insides of the spaghetti squash.
7.  Place the buffalo chicken on top of the spaghetti squash and sprinkle with the cheddar cheese.

8. Bake for 10 minutes, or until the cheese has completely melted.

I have definitely had a couple crazy months recently and I have been working a couple extra hours, sacrificing a little sleep, but now that qualification period is over, those few hours sacrificed has paid off!!

I am a nurse who is just so passionate about helping others. Something I added just 1 year ago into my life was starting a new career as a Beach Body coach. My job is to help others live a healthy and fulfilling lifestyle.  I educate people on clean eating, along with exercise so everyone can get the most out of their journey. I started this journey of coaching when I was going through my own transformation. I was in a challenge group (support group through Beachbody) using Insanity and Shakeology, and was so happy with my results I was getting and how much energy I had! My cravings were gone after using Shakeology, and I was just feeling different than I ever did with any diet I tried.  What really hit the spot with coaching, was my results were not just a phase or diet I was on… this was something that you can live off of.. its a lifestyle of healthy eating and exercise.  I wanted to share my journey and transformation with others so they can see its real.. it is not just another fad diet. I also realized you can exercise as much as you want, but if you do not have the nutrition part down, your results will not show.  After changing my nutrition, that is when my results were most evident to myself and everyone around me.  
I ended up losing 40 lbs and 25 inches! This was from start to finish using Insanity, Turbo Fire, P90X, and the Ultimate Reset. I also incorporated Shakeology, our health shake meal replacement every single day. I know nutrition can be tough to plan, so this was something that worked so well for me.  One less meal to plan and purchase at the grocery store!
Since I had my transformation, I really got into coaching and have been helping so many people! I set new goals for myself and one thing I did not do was set big goals.. I was the type of person who is afraid of writing something down and not accomplishing them, so I would not write my huge push goals because of the fear of failure.  I wanted to feel that sense of accomplishment and I knew if I didn’t write them down, I would not be let down if I didn’t make those goals… Do you ever feel like that?? 
Let me say its the worst thing to do! If you do not write your goals down, there is no sense of urgency. You need to give yourself deadlines, that importance, and accountability to yourself to reach what is truly important to you.  I know this because once I finally wrote them down, I worked harder than ever, and stayed committed to my goals. I was consistent and didn’t give up until I reached them!
Now that sense of accomplishment is so much better because those huge goals I once thought were impossible are now met and it’s time to make bigger goals!

My goals I did not write until just 4 months ago: 
5 star and ELITE by Dec 2013.  
Month by month, I was getting very slowly showing progress, but it was honestly not until I wrote my big goals down, that everything was changing before my own eyes… more people asking me to help them reach their health and fitness goals, people wanting to coach with me on my team and help others, and my paychecks increasing each week.  I was growing as a coach, leader, and person! I have been learning more about myself than I ever have.. how to communicate with others, and how to really put others before myself.  One of the greatest accomplishments though is also having my family included in all of this.  Supporting me and being healthy with me and allowing me to take the time to help others. 
Since I had so many people that had the same passion for helping people, I ended up creating my own team which is now called Forever Fit! It’s all about living that healthy lifestyle and making it something that is long term vs something just  temporary.  We are in this for the long run.  
So what is Forever Fit all about? Forever Fit started with me wanting to help anyone who was willing to get healthy.. I ran challenge groups to help people stay accountable and motivated to reach their goals.  Many of these challengers are the ones who ended up joining my team because they saw this is exactly what they needed to have that lifestyle they have wanted. As my friends and acquaintances saw what I was doing, they became interested and wanted to have the opportunity to make a career with health and fitness… they wanted a job they would love.  So as more and more coaches joined me, we became one team.. Forever Fit!! The coaches on my team have taken time to help others, to dedicate themselves to live this healthy lifestyle themselves. It has not been always easy for all of us, but in the end, we can all say this is such a rewarding career and not one of us would trade in this opportunity that was given to us!
I have now added over 30 coaches to my team and have over 100 members and it is growing faster than ever! This did not happen because of me… this happened because of my amazing coaches who are so committed to their health, along with helping others with doing the same exact thing.. GETTING HEALTHY!  It’s all about promoting health and preventing illness and diseases! We are adding years to people’s lives just by educating and motivating!! 
Since growing my team to something so amazing, I can now say my goals have been reached… Not just the 2 star I wrote down, BUT the 5 star ELITE… Actually, I went a little further and went to 6 star Elite! I have to recognize my amazing Diamond coaches who have helped make this happen.. Who have put in lots of work, dedication, and consistency to get to this Diamond status!

Michael Gowan: Michael was my first Diamond coach that works full time, is a full time father of 2 awesome boys and he is also my cousin! He not only has a passion for health and fitness, but also for personal development.  He is definitely the preacher type.. Someone you can always rely on to brighten up your day, but also take you to reality and help you see the greater things in life.. to be thankful for what you have.  He went to Diamond in just 90 days! 

Jen Morris: Jen is a stay at home mommy of 2 amazing boys, 1 which was diagnosed with Autism.  Jen has spent so much time with figuring out the best ways to make her son less symptomatic with this illness. I will say she has done such an amazing job.  She has officially been nominated by me as the Queen of clean eating!  She has practicing with clean foods, raising her own animals so her food has absolutely no chemicals that can affect her son’s behavior and illness.  This is helped her with having her son on less medication and his illness is more controlled, thanks to her dedication to her family.   Jen went diamond in less than 60 days!! This is crazy, and something not many people are able to achieve!

Alisha Smith: Alisha is yet another amazing coach who literally surprises me every week with an awesome come back.  She started as just a challenger wanting to see her fitness and health results.  As she started using beach body workouts and Shakeology, the challenge group gave her so much motivation that she totally blew it out of the water with her results.. She has lost over 40 lbs and 40 inches!! She could use soooo many excuses for not following through.. she is a full time mommy of 4 (youngest being less than 1 yr old), she owns her own bakery (yes I said it, BAKERY), she is a full time Spanish teacher, and now is coaching with Beach body full time! HOLY man is this is busy momma!!! She lets NOTHING get in her way! She is so dedicated and committed to her health and family, it’s unreal!!  She also became a Diamond right around 60 days!!

Andrea Youngblood: This girl right here was one of my first coaches who wanted to coach as a career.  She is not only a mommy of 2 amazing sweet little boys, but is also a full time nurse.  Yes, we work together at 2 jobs! She sees enough of me that is for sure lol!! But she started coaching after getting great results with P90X and wanted to incorporate Shakeology and other workout programs and help others on their journey as well!! She has made such an awesome team for herself and is definitely more of the teacher type!! She has had an amazing transformation as well!! Lauren Penrose: Lauren is a mommy of a beautiful little girl Nora, a Physician’s Assistant, and also my sister in law! She has reached Diamond rank just in around 60 days! Lauren being a new mommy, and a full time PA still has dedicated herself so much to helping others make that healthy lifestyle for themselves! I am so excited to say she is now going part time as a PA to focus on being at home with her daughter and work from home as a health and fitness coach with Beachbody! So proud of you!! 

Cody Penrose: Cody is my husband of 4.5 years, my rock, and my support.  Although he was not always supportive of me taking hours away from family to work on the computer, he has seen a huge change in me.. He sees the excitement when I get a challenger’s result that they have lost a number of inches or pounds, or when one of my fellow coaches rank advanced.  He sees the passion in me with this career and knows I am so thankful this opportunity came for me to officially stay at home with my children!

Yes, I said it.  After 1 year of working as a mommy, nurse, and Beach body coach, I have achieved my goals of 6 star ELITE Diamon, ranked #109 out of over 140,000 coaches, and am able to quit my job as a nurse and work only from home! I will say I will never completely quit my job as a nurse, because I love helping people and having that interaction and communication with others is so rewarding, but I am so happy to be able to work relief. I will work when I want, and have the best of both worlds being home with my kids, while still working as a coach to help everyone!
I do want to mention a huge part of my success came from my up line coach and cousin Melanie Mitro. She has been there for me the entire way throughout my journey.  She is the #2 coach in the Beach body company and the founder of the Dream Team.  Yes, I am still a part of this team! It is awesome to have a mentor to guide you into the right direction, which is exactly what I learned to do.. Be a leader and mentor for my own coaches to help them grow.

Oat Flour Crepes

I am soooo in love with breakfast food its not even funny! Not only is it so good for you to jump start your metabolism for the day, but I just love how breakfast foods can be eaten any time of the day and still fulfill your cravings!! So I know some breakfast foods that taste really good need lots of time to prepare, BUT not today!! My son and I had a BLAST cooking these together!! 
It’s a simple recipe that is quick and literally 3 ingredients to make! So here it is!

Ingredients:
  • 1 egg
  • 1/2 cup rolled oats (ground into oat flour)
  • 1/2 cup almond milk or any dairy/non-dairy milk
Use a food processor ( I used a magic bullet), and add the oats in to blend into flour.  
Then add in the egg and almond milk and blend for about 20 seconds.
Use a frying pan to cook the crepe… I spray a little olive oil on so it does not stick.  
Pour a thin layer onto the pan and cook on medium for 4 minutes, then flip and cook the other side for an additional 4 min. 

Remove and set on plate… Time to make the filling and toppings! So for the filling, I just used what I had laying around.. So used 4 TBSP of plain Greek Yogurt, 1 TBSP Almond Butter, and 1/2 tsp cinnamon!
Mix together and put on crepe!

I cut up 1 banana and put half of the banana inside the crepe with the filling, and left just a couple for the topping!

 Time to wrap up those bad boys and top off with some bananas!
and then my son took it upon himself to create our crepes into CARS!!!

This is  creativity right here from an almost 3 yr old!! I just LOVE their imagination!!! It gets even better.. He asked me so nicely to put candles on to make it a birthday cake since his birthday is coming soon!! I couldn’t resist!!!

Pumpkin Protein Pancakes

Nothing like pumpkin this time of year! Everyone is craving pumpkin, but instead of going to Starbucks and getting your pumpkin latte or treats with lots of calories that are not going to get you to your goal weight, try making this healthy version of pancakes!! Perfect for the family too!! 
Ingredients: (6 SERVINGS)
  • 1/2 cup pumpkin
  • 3 egg whites
  • 2-4 Tablespoons unsweetened almond milk (or milk of your choice!) *Start with 2 Tablespoons and add more if the batter is too thick.**
  • 1 Tablespoon  RAW honey
  • 1/2 cup oats
  • 1 scoop (~1/3 cup) vanilla protein powder ( I use SHAKEOLOGY)
  • 1 Tablespoon ground flax seed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
Directions:
  • Put all ingredients in a blender and blend well
  • Pour into heated skillet
  • Cook 1 min on each side
  • Drizzle with Pure maple syrup or raw honey!
  • ENJOY!
