Clean Chicken Tortilla Soup- Crock Pot Style!

Ingredients:
  • 1 tsp ground cumin
  • chopped fresh cilantro
  • 1/2 tsp sea salt (I use Himalayan)
  • 1 stalk chopped green onion
  • 1 tsp oregano
  • 4 cloves garlic, minced
  • 4 14.5 oz cans of organic diced tomatoes with chiles
  • 8 cups organic, low-sodium chicken broth
  • 2 lbs uncooked boneless skinless chicken breasts
  • ¼ cup shredded mozzarella cheese (to top off- optional)
  • 1 tsp Plain Greek yogurt (to top off- optional)
Directions:
1. In a large slow cooker, combine all ingredients, stirring frequently to make sure ingredients are mixed evenly.
2. Heat on low for 8 hours or on high for 4 hours.
3. Shred chicken
4. Top off with Mozz cheese and guacamole if you want to add in a healthy fat!
5. SERVE AND ENJOY!

    1 red, 1 yellow, and less than 1 orange and green 🙂 Since the cheese and peppers make up for the whole pot, I do not count them as a serving

      You get a little more than 1 cup.. honestly when I add the ingredients and once its done, I split them into 6 containers and those are my servings.
