Chicken & Rice Casserole
Since we are back to school, I am all about finding simple recipes that I can throw ingredients together and get all the nutrients, protein, healthy carbs, and veggies, all in one! With that said, I made a casserole dish with chicken, rice, and broccoli, and the family enjoyed it! So now I am going to share with you all so you and your family can enjoy as well!
CHICKEN & RICE CASSEROLE
Ingredients (serve approx 6 people)
- 4 chicken breasts, cut into bite size pieces
- 2 cups brown rice (cooked according to package)
- 3 cups broccoli florets
- 2 tbsp EVOO
- 1/2 cup 1% milk
- 1/2 cup chicken broth
- 10.5 oz can cream of chicken soup
- 1/2 cup Plain Greek Yogurt
- 1 tbsp Italian seasoning
- 1 tsp minced garlic
- Himalayan salt
- Pepper
- 2 cups shredded cheddar cheese
- 1/2 cup Gluten free bread crumbs
Directions:
- Pre-heat oven to 350 degree.
- In a large pan on medium-high over stove, add EVOO. Then add cut up chicken pieces. Add Italian seasoning, minced garlic, and desired salt and pepper to chicken and cook for approximately 5 min. Add broccoli and cook for 3 more minutes (Make sure you close lid so the broccoli steams).
- Meanwhile, cook rice according to package and set aside.
- In a large mixing bowl, Add chicken, broccoli, rice, milk, chicken soup, Greek yogurt, and 1 cup cheddar cheese. Mix so ingredients are combined.
- Using a 9X13 glass baking dish, spray EVOO on the bottom of dish, then pour mixture into dish.
- Top off with remaining cheese and bread crumbs.
- Cover and bake for 15 minutes.
- Let casserole sit for 5 minutes before serving. ENJOY!
This dish is great to meal prep to add some servings into containers for next days lunch or dinner!
