Chicken with Balsamic Glaze

Ingredients
  • ½ cup extra virgin olive oil
  • ½ cup balsamic vinegar
  • ¼ cup Braggs Liquid Amini (or low sodium soy sauce)
  • ¼ cup Worcestershire sauce
  • ⅛ cup lemon juice
  • ¾ cup light brown sugar
  • 2 tsp dried rosemary
  • 1 tsp Himalayan salt
  • 1 tsp ground black pepper
  • 2 tsp garlic powder
  • 6 chicken breasts or 3.5 lb chicken
Instructions
  1. Combine all ingredients, except for chicken, in a mixing bowl and whisk together.
  2. Remove a half a cup of marinade and reserve for basting the chicken later.
  3. Place chicken in a large, ziploc bag and pour marinade over the top. Close securely.
  4. Marinate for at least 30 minutes, but up to 24 hours (I found it was delicious when I marinaded it for 30 minutes and 1 hour).
  5. Bake in oven at 350 degrees for 35 minutes or until cooked all the way through.
Optional, but makes this recipe taste even better:
  1. If you bring the reserved marinade up to a boil, let simmer until slightly reduced, it makes a wonderful sauce to go on top of the chicken.

ENJOY!!! I loved this meal with our home made green beans with potatoes and ham and a little fruit on the side!!

Setting yourself up for success- Picking the right foods and MEAL PREPPING for the week!

So Saturday, I had an awesome opportunity to take my challenger to the grocery store and help her pick some healthy foods and prep her meals!! Yes, this is something I do for fun, but also when she told me she fell off my challenge group and couldn’t do it because she didnt know where to start with meal prepping and picking the right foods, I had to step in!! There is NO reason why I couldn’t help her get things going!! Thank goodness, she lives close by that I was able to do this!! It was our first time meeting, so it was awesome that I was able to connect with my challenger more than just on face book in our secret group!! 
So Saturday afternoon, we booked 3 hours together to go food shopping and prep her meals.  Since she used my recipes from my website, I could easily help her since I make them all the time!! Amanda is participating in my challenge group with using 21 DAY FIX and using SHAKEOLOGY, our health shake meal replacements, which I will talk more about!!

After we did our shopping, we went back to my house and prepped away!!! It literally took about 1 hour to get the food prepared and now all she needs to do is throw everything in the oven and walk away!! Now she has all her meals for the week!!! She is also incorporating SHAKEOLOGY as a breakfast every day to give her the nutrients and super foods that she is not getting with her every day food… By adding in her Shakeology, we are helping her increase her energy level, decrease bloating and cravings, and improve her overall heart health and digestion within 2 weeks!! 21 Day Fix Week 3 exercise/meal plan

21 DAY FIX WEEK 3 EXERCISE/MEAL PLAN!

I felt like it was yesterday that I was patiently waiting for my 21 day fix to arrive at my doorstep, now I’m already into the 3rd week!! Its crazy!!  So as I have my story posted here, I am going to be totally honest.. Yes, I am a fitness coach, but I am also human,.. I totally was discouraged by looking at the scale even in the first week.. I am so mad at myself for not sticking with the complete guide for a few days, but I realized how good I did feel

I was less bloated, not hungry as much, and was able to focus on the important things like getting in my water intake and keeping myself busy activity wise, rather than always on eating! Yes, I eat all the time!!  But I am by no means over weight, its just I tend to be obsessive about food.. Using the 21 day fix is really helping me with portion control and knowing when to eat! Although I took 2 days off, I was still able to use portion control, which was great! I have a feeling if I would have stuck with it I would have started to see results on the scale, but at the same time I need to realize I am at a low weight for me and my body type already.. I see my abs, I have definition,
so I know there will not be a significant drop in pounds, which is why Im back at it!! I am only on day 2 of week three and feel awesome!! 
I think this is a great way for me and my personal issues to get over focusing on the scale because I know how good I feel without looking at that scale.. It means almost nothing anymore to me. So I will continue this journey and enjoy every minute!!
I will say now that I am on week 3, there is an option to kick your workouts up and double them, which I am since I did not completely follow last week.. I have done 2 days of double workouts and I LOVE IT!!! I feel so strong and I am burning calories!!

If you have not seen or heard much about the 21 day fix, you have a nutrition guide to follow and this guide gives you color coded options for each food group.. You get the colored containers with the program to help you portion size every meal you intake! 
This was a meal prep day and you will notice the blue, green, red, and purple containers on the right and at the bottom of the picture.. those are the containers you get and the others are mine, but already portioned out according to each food group.
21 days of portion control and focusing of healthy eating and drinking mainly water can go a long way!

If you look at other companies with the same concept with shakes, you usually do not get regular clean eating, health shakes, and exercise together.. Many have boxed and packaged food full of soy and sodium and not from whole foods, the shakes are not natural and full of artificial sweeteners and are not even an entire meal, and most do not talk about exercise and include workouts period! With Beach body, you get the whole nine! You get what we call a long term LIFESTYLE! Something you can live off of! 
So back to the exercise..  I am in love with these workouts! You again, get the best of both worlds.. You get cardio, weights, pilates, and yoga! This program has amazing modifications, so whether you are a beginner or an expert, this program will work for you!

Week 3 double workout!

I love that I can include my family in this too! I have my kids working out with me (they hop around but they love it), and they want to eat want mommy is eating! It doesn’t get much better than that!

On the last 3 days, I will be doing the 3 day quick fix, which is a very strict plan to help you get the most of your results and change your body up some! Tricking your body is one of the best ways to get off a plateau. 
I am still so excited to finish this week off and don’t worry, I will be restarting this once again on Monday for another 21 day fix! You can do the fix up to 3 times before taking a small break from it!! This is perfect for people who are needing those quick results for vacations, weddings, etc! I am going on a cruise in less than a month, so it will be done!!

New Year Weekly Meal Plan/Exercise Plan

So, its the New Year and a fresh start! It’s time to put away the cookies, cake, and ice cream, and start making new goals!! I know most of you have probably set new health and fitness goals.  I want this year to be different for you!! As some of you know, only 30% of the population actually follow through with there goals.. the other 70% fall off the wagon within a couple months and many within 2 short weeks.  It’s difficult, and takes a lot of dedication and consistency, which is why I run my challenge groups.  
Challenge groups?!?  Your probably asking, what the heck are those right?!
As a health and fitness coach, I work with my challengers 1:1 to help them reach their goals.  I add them into a closed group on face book where only the people in the group can see and every day, I provide tips, recipes, and also give meal plans to help you stay accountable and motivated to reach your ultimate goals! 
What are the requirements? 
This is very simple.  I have each challenger use any home DVD program of their choice from beach body, along with clean eating, and replacing 1 meal a day with Shakeology, our health shake meal replacement.  Each fitness program comes with a schedule and nutrition plan, so you will have tons of ideas to use for your journey with clean eating! There are also different intensity levels, so depending on if you are a beginner, intermediate, or more advanced, there is a program out their to fit your needs!
Shakeology comes in different flavors.  You have your chocolate (MY FAV) for your chocolate lovers, Green berry (people who are juicers LOVE this), our newest flavor Vanilla (amazing and you can make so many recipes with it), and we also have Vegan Strawberry and Chocolate! When I first heard of Shakeology by my cousin, Im not going to lie, I thought she was just trying to sell me something.  Since I was looking to lose 40 lbs, I figured, WHY NOT?! What’s is the worst that can happen..  I would just be in the same position.. So I gave it a whirl, and soooo thankful I did! I would not be anywhere near my results if I have not started in a challenge group using Insanity and Turbo Fire, and drinking Shakeology on  regular basis.  Within 2 weeks, I was seeing a huge difference! Since incorporating the fitness programs, clean eating, and Shakeology, I have reached my fitness goals and am now sharing my experience with others! 

In my challenge groups, I have each participant take before and after photos and measurements so they can best track their progress.  You would be surprised with the results you get, rather than just going by the mirror and scale.  These true measurements are the most important, other than how you feel inside!! 

Starting Jan 6th, I am running not only 1 group, but 2! My first group is called New Year, New You! Yes, it sounds cliche’, but I feel people truly do make lifestyle changes in my groups and feel like a new person! This group allows each individual to pick their own fitness program to use during the challenge.
My second group is actually my first test group! P90X3 is our newest fitness program out their and is absolutely AMAZING!! There are so many things I love about this program.  It is only 30 minutes long, incorporates both cardio and weight training, and is a high intense workout, but has amazing modification, so literally ANYONE of any level of fitness can use this!  I am doing this program with my challengers so am including myself in this test group! I started using the workouts so I can help everyone better explain it, and every new DVD I use ends up being my new favorite! They are all awesome and give me an amazing workout!

As I mentioned above, I help my challengers with meal planning. I make a meal plan every Sunday to give them a guide to use (will differ, depending on caloric intake) and different ideas.  I have been making my own meal plans for quite some time, and love how it works with my body! This is my plan for this week:

You will notice I cook a large amount of the same food.  I do this for 2 reasons.. I save time and $$!
I try to be as frugal as I can, without jeopardizing my health.. I know my body comes first because if I do not have health, I have nothing!

It’s Official- 5 Star Elite Qualifying Diamond Beach Body Coach!

Today is an AMAZING day for me and ohhhh so much to tell! So, it is time to not only announce that as of today, I am a 5 star Elite Qualifying Diamond Beach Body Coach, but I want to tell my story of how I got here.. Right now it seems to good to be true, but I need to come to reality!

So 1 yr ago, I joined as a health and fitness coach with Team Beach Body.  I was in a challenge group in the middle of my own transformation, but decided to start my coaching career during my transformation because I was soooo in love with the workouts and what they were doing for me, but the SHAKEOLOGY (health shake meal replacements) I was drinking every day changed my health and body so much! 
I use to be the type who would exercise to eat… I would exercise, and then shove food in my mouth until I needed to wear sweat pants because I just made myself bloated to extreme! Literally, I was a HUGE fan of peanut butter and chocolate ice cream… oh and did I mention peanut butter!! haha! I would eat a half jar in one sitting… UNTIL Shakeology came into my life.. I literally started drinking Shakeology and within 2 weeks, those cravings for chocolate ice cream and peanut butter went away and my craving to be healthy increased… My digestive system improved and my bloating went away.. 
So since having these results, I decided to give back and help others who needed me to motivate them, to keep them accountable, and help them reach their health and fitness goals! Although I was not at my goal yet, I was able to have people join me on my journey and it was so amazing and helpful for everyone!  I didn’t really start getting involved until Jan of 2013 with having challenge groups of my own to help others with their goal, but it was the best decision I ever made! My challengers started having these amazing transformations that were changing their entire lifestyle, and having people thank me for the motivation and that I am making a difference in their life… And this is what drove me to push harder, and go further into my career of coaching! I was also working as a Registered nurse part time, so having my 2 young children and a part time job, did not give me all the time I wanted to focus on this career, but I did the best I could! I talk about getting into a healthy lifestyle EVERYWHERE I go! I’m sure if you talked to someone who knew me, they would agree lol… Probably could say it was annoying.. I had many people start judging me for my new lifestyle, but I did not care because this is my passion!

He was NOT supportive of this as a career at all.. He would tell me this is not a real job and will go away after another year or so, and I will not go far in this.  If you know me again, lol, you will know that when someone doubts me, I push even harder.  My husband was also my motivation to be successful with this career. I wanted to prove I can make a difference in people’s lives. That I can make up for those hours lost at my nursing job in the ER.  
I pushed, I sacrificed some sleeping in, going to bed early, and some time with my family so I can be successful and have an income so my family can live comfortable without worrying about money and living pay check to pay check.

Who can say things they do for themselves on a daily basis that you love can become a career.. I work in my workout clothes, I take lots of pictures of myself working out and my healthy food, and even my 2 boys working out with me! I am acting as a role model for my kids, my family, my friends, and I LOVE IT! I make my own hours.. It was my choice to put in extra time, because I wanted to get to the top. I also can stay home more with my children and not miss them growing up.  What an amazing opportunity! 
I continued working 15 or so hours a week and towards the end of the summer, I came in contact with most of my coaches who are now Diamond coaches and who has made such an impact on me! 
I swear, I have the most motivated, inspirational, and dedicated coaches EVER!! Five in particular I want to just point out because they got me to where I am today.. These coaches have put in lots of time, commitment, and work into their health and fitness career, and I am so proud of where they are today.  Andrea Youngblood, Alisha Smith, Jennifer Morris, Lauren Penrose, & Michael Gowan.  This crew are my five diamonds.. They are leading by example and every one of them have a transformation from using either Beach Body workout programs, drinking shakeology, or incorporating them all into their daily regimen.

I also have to give lots of recognition to my up line coach, mentor, and cousin Melanie Mitro. She is who got me started with Beach Body and I could not be more blessed to have such an amazing leader guide me to success! She always listens to me vent, even if I call 5 times a day, she helped me through all my struggles, and helped me through my moments of success!
I literally went from a diamond coach, to a 5 star qualifying in 5 weeks. I am now a 5 star Diamond, Elite Qualifying Coach in 7 short weeks.  
You are probably wondering, what is Elite anyways?!?
Being an Elite Coach means you are in the top 1% of over 100,000 Beach Body coaches in the company..I work with integrity and passion.. I help everyone who wants my help!
I feel that is how I got to where I am today.  When you are an Elite coach, it is the highest recognition for coaches.  An Elite coach gets bonuses, VIP seating to all events, and even gets to go to events a day early! I am so thrilled to have even gotten this close, because my goals were actually not even to be in this position!

Now I want to talk about goals! WHY?! Because if you do not make goals in life, then there is no priority to reach anything.  I make goals all the time.. I set them, but I break through them! 
I want to tell you what my goals were this year. 
In January, I had a goal of Diamond in a year… isn’t that what all new coaches have? Diamond is such a high rank! Yea, but when I got to diamond at the end of March, it felt no different lol.. Its just a name that many people get to with hard work.  I needed to feel different, which is why I made a new goal of 2 star and making 1000$/week by the end of the year 2013! I made this goal in August 2013.. I had no diamonds on my team, but I knew I had a few that were going to be successful very quickly!  When I said that goal, I had Melanie my up line coach and my Success Partner tell me no… Your goal needs to be 5 Star Elite.. I am going to be completely honest.. I had NO idea what they were talking about!! 5 Diamonds in less than 6 months?? ELITE?? I literally just started building my team!! So I said ok to make them happy…
It was not until after I got off the phone with them that I realized what I did. I made a commitment to something and I am now obligated to that.  I do not commit to something and not follow through.  That is how I always was and how I will always be.  Here I am today, after pushing, having good communication with my team, setting weekly/monthly goals with my coaches, leading challenge groups, leading Apprenticeship and Emerald groups that I have achieved all my goals plus more for the year 2013! 
5 Star/6 Star and Elite Qualifying, and reached my 1000$/week goal! I am now able to cut my hours back as a nurse even more to focus on my passion of helping other live a healthy and fulfilling lifestyle!

This was my 2013 goal board, every one was reached but 1 and it is almost fulfilled!! What I am getting at is if you want something bad enough, you will do what it takes to get there.  Make goals, and take action. Don’t give up on your dreams.  You do not want people giving up on you right? 
Chose a career that truly makes you happy.  I promise, I am living proof that it is possible to fall in love with your job to where you wake up wanting to work.

What I do as a coach to help my customers meet their health and fitness goals is run challenge groups.  The challenger picks a workout program of their choice and drinks Shakeology once daily to maximize their results. Part of me running the Apprenticeship is teaching you how to run a group, along with how to build a team of your own! Every day, you will have small assignments to help you feel comfortable as a coach and to start growing as a person, coach, and a leader!
What is awesome about working for this company is you do not have to be a personal trainer, doctor, rocket scientist, or even at your goal weight, although you can be any of these if you would like ;)… I started as a challenger in my own journey that just wanted to help motivate others. I am a nurse with 2 small boys and wanted to find a job that gave me the opportunity to work from home. I already was learning to eat healthy, I was using the workouts and shakes, so I decided to ask people to join my journey with me! Guess what!? Within 1 yr, I am now making what I do as a nurse full time with a 4 yr BSN in nursing!
I am here to show you its possible! I never thought in a million years I would even make up to work part time, BUT since I love working out and keeping myself and family healthy, I shared what I knew and people were inspired!

After struggling with an eating disorder for 8 years I decided after my second baby that enough was enough. Without my health I can’t take care of my two beautiful girls and I want to be their inspiration to love themselves and be healthy. I found that I was extremely tired all the time and depressed and I needed to make a change. All I could think was “would be daughters be proud of their mom?” – I want to set an example for them and become who they look up to. 

I started eating clean, drinking SHAKEOLOGY, and working out to TURBO FIRE in August when my second baby turned 2 months old. I was determined to find a healthy relationship with food and complete my fitness program. I love TURBO FIRE because it’s both fun and challenging! Chalene Johnson has so much energy and personality it really helps get me to push harder. When I heard they came out with a vanilla SHAKEOLOGY I was all over it and I’m so addicted! I find new recipes everyday and look forward to drinking my ‘sweet treat’ every afternoon!
My body has definitely transformed from drinking Shakeology and exercising not only from a weight loss perspective, but the way I feel inside as well. I no long get migraines, I’m regular, I have the energy I need to take care of my two little ones, my self esteem has lifted, my emotional well-being is so much stronger, and I’m not exhausted by the end of the day like I used to be! I cannot imagine waking up and not ‘pushing play’ because of how it makes me feel day in and day out!!
I’m currently doing the ‘advanced schedule’ ofTURBO FIRE but will be starting a whole NEW journey with Focus T25 later this month with my husband!! I inspired him to be healthier and change his habits. This is why I became a Beachbody coach! I aim to help others by sharing my story and hopefully become an inspiration to many more people!

Celine has been such a motivated and dedicated challenger of mine and I am sooo proud of the hard work she has put into her new lifestyle, because she is now able to share this with others and help them live a better quality of life. She stayed consistent with drinking her SHAKEOLOGY every day and her workouts, and it shows by putting 100% effort into 80% nutrition and 20% exercise, you can achieve anything!!

How to grow a successful business as a Health and Fitness Coach!

So as a Beach Body coach, we have lots of incentives from our company.  We are given the opportunity to team up in groups of 5 coaches (I have my own team members on my team, but you can chose any coach in the company to group with) and join the CUP CHALLENGE! What this is, is teaming up, and learning to grow our team by going out there and trying to help lots of people!
I am SOOOOO beyond excited and proud to say our team FOREVER FIT is #1 this week out of over 100,000 Beach Body coaches! I am the founder of FOREVER FIT and have the best coaches int he world! We have become so close and it is seriously like a 2nd family! My coaches are so motivated, energetic, and willing to help as many people as they can! It is all about changing lives!

HOW I get to the top and help people is by running challenge groups.

What is a Challenge Group??
A challenge group is a 30, 60, or 90 day challenge that I run and hold in a closed group on face book.  No body except the challengers can see the group.  What I do in my groups is provide challengers with lots of great information, such as nutrition and fitness tips, meal plans, and I do lots of motivational posts to keep you motivated and accountable so you can reach your ultimate fitness and health goals.
It takes 21 days to get into a habit… My job in 21 days is to get you to where you are in a routine and feel that need to exercise, and eat healthy, and have less cravings and more energy!

What do I need to join a fitness challenge?
You need just a few things to get you started on your fitness journey..

#1. A beach body program– You can chose any exercise program that suites you, and if you are unsure, my job is to help you find what is the best fit for you.  The programs vary in intensity, and whether you like cardio, weight training, dancing, or a variety, we can chose depending on your preference.  Each exercise program comes with a meal plan that you can either follow, or just use as a guide.  You also get a schedule, so you know exactly what workout to do and what day! How simple right!? That part is already done for you!

#2. SHAKEOLOGY– Shakeology is our health shake meal replacement full of dense nutrition.  This is used once daily in place of an entire meal.  Just a little about our shakes, they are unlike any, because of how powerful they really are!

Roasted Asparagus

ROASTED ASPARAGUS 


Ingredients:
1 lb Asparagus firm and bright green
2 tbsp Extra Virgin Olive Oil
1 tbsp balsamic vinegar
1 garlic clove
Himalayan salt and black pepper to taste
Directions:
Pre-heat oven to 425
Cut ends of asparagus (the ends that are lighter in color)
Rinse well under water to clean
Toss spears in olive oil, garlic, and vinegar
Lay out in single layers on shallow baking dish and sprinkle Himalayan salt and pepper.
Bake 6-10 min, just until they are not too crunchy, but you can stick your fork in each spear!
Nutritional Facts:
Calories: 88 g
Protein: 2 g
Carb: 5 g
Fiber: 2 g
Sugar: 1 g
Fat: 7 g (healthy fats!)
