Philly Cheesesteak Stuffed Peppers
I am a big fan of Philly Cheesesteaks. I cannot deny that! But I am also a big fan of finding healthy alternatives to the not-so-healthy food that I enjoy!! So here you go, your healthy version of a Philly Cheesesteak! If you do not eat red meat, simply replace the red meat with ground turkey or chicken.
Ingredients: (Serves 4)
- 4 Green Peppers (sliced in halves and removing the insides)
- 1 Sweet Onion (sliced and then cut in half)
- 1 garlic clove, minced
- 1 lb lean ground beef (I use 96% lean)
- 12-ounce organic tomato sauce
- 1/2 cup Shredded Mozzarella cheese or Provolone (your preference)
- 1 Tbsp Extra Virgin Olive Oil
Directions:
- Preheat oven to 325º
- Saute’ onions and garlic on high, in olive oil until they’re translucent
- Add beef to cooked onions and cook until it’s no longer pink.
- Stir in 8 of the 12 ounces of tomato sauce and cook on low for 3 more minutes, stirring frequently. With the 4 oz of the remaining sauce, pour it on the bottom of a 9X13 baking dish.
- Add peppers to the baking dish.
- Fill the inside of the peppers with meat mixture.
- Sprinkle shredded cheese on top of peppers and mixture..
- Cook for 15-20 minutes until the cheese is melted. If you want a softer pepper, add some water to the bottom of the pan and cover with tin foil.
