Sausage Egg Breakfast Taquitos
Sometimes the easiest thing to do for breakfast is to “grab and go,” or even SKIP breakfast. SAY WHAT?!!? To me and many others, breakfast IS the most important meal of the day! This is how we get our day going, get our metabolism moving, and fuel and energize our body! I notice that if I eat a good, filling, healthy breakfast, then I feel so much better throughout the rest of the day! So I wanted to give you all a great option that you can even prepare ahead of time and make this your new “grab and go” breakfast that is healthier than your usual quick breakfast meals like cereal, pop tarts, or whatever other option you may choose!

Ingredients:
- 1/2 Lb turkey sausage
- 2 cups spinach fresh, chopped
- 1/4 cup diced green bell pepper
- 4 large eggs, 2 egg whites
- 4 tablespoon Feta cheese crumbled
- 1/2 cup shredded cheese shredded, any flavor (Cheddar, Pepper Jack, Monterey)
- 1/2 cup salsa plus more for serving
- 7 medium tortillas whole wheat
- Olive oil cooking spray
- Sea salt
Directions:
- Preheat oven to 425 degrees.
- Brown sausage in a large skillet over medium heat. When sausage is almost cooked through, add the chopped spinach and bell pepper and saute for a few minutes.
- Crack eggs into a bowl, whisk and add to skillet. Stir occasionally until eggs are just barely cooked through. Remove from heat and stir in the Feta cheese.
- Microwave tortillas for 30 seconds or until pliable. Divide filling between tortillas.
- Top each with a little shredded cheese and salsa. Roll up tightly and place, seam-side down, on a non-stick baking sheet that is sprayed with Olive oil..
- Spray tops of taquitos lightly with cooking spray and sprinkle with a little kosher salt.
- Bake for 10-15 minutes or until crispy.
- Serve with extra salsa for dipping.
