Chickpea Blondies

Our family loves desserts and treats. We are also a huge fan of peanut butter and the kiddos love chocolate. I have a goal of finding healthier alternatives to yummy treats and when I saw you can make a dessert out of chick-peas, I was hesitant!

We gave it a go and I was certain, my picky 9-year-old would refuse to try this because he saw the chickpeas in the recipe. To my surprise, after trying his first bite, we went for two more servings. If my 9-year-old can enjoy this, I am pretty sure anyone can!

Ingredients: (Makes approximately 16)

  • Cooking Spray
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/2 cup all-natural peanut butter (or almond butter)
  • 1/3 cup raw honey or agave
  • 2 teaspoons vanilla
  • 1/2 tsp Himalayan salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/3 cup soy-free, dairy-free chocolate chips
  • Coarse Himalayan salt, for topping

Directions:

  1. Preheat the oven to 350 degrees F and spray an 8×8 inch pan with nonstick cooking spray.
  2. In a food processor, add all ingredients except chocolate chips and process until the batter is smooth. 
  3. Add chocolate chips and mix with a spoon or spatula.
  4. Spread batter evenly in prepared pan
  5. Bake for 20-25 minutes or until the toothpick comes out clean and the edges are slightly brown. The batter may look underdone, but you don’t want them to dry out!
  6. Cool pan for 20 minutes on a wire rack. 
  7. Sprinkle with sea salt then cut into squares. 

Store covered in the fridge for up to 3-5 days.
