PROTEIN (SHAKEOLOGY) BANANA BREAD
Ingredients:
- 1 cup ground up oatmeal
- 3/4 cup shakeology (vanilla, chocolate, or cafe latte)
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 2 ripe bananas
- 3/4 cup plain Greek yogurt
- 2 large egg whites
- 1/4 cup unsweetened applesauce
- 1/3 cup stevia
- 1 cup chopped walnuts, divided (optional; my family isn’t big on nuts in our breads)
Instructions:
- In a medium-sized bowl, whisk together oats, shakeology, cinnamon, baking soda, and salt. Set aside.
- In a large bowl, mash bananas, then mix in yogurt, eggs, applesauce, and stevia.
- Pour dry ingredients into wet mixture, stirring until just incorporated.
- Fold in most of the walnuts (again optional). Then pour into a greased bread pan. Sprinkle the remainder of the walnuts over the top.
- Bake at 375 degrees for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes. Enjoy!
