Green Goddess Salad
I recently found this recipe through a co-worker of mine and apparently, it has been all over TIKTOK for a while now and I am just late to the party! But once I tried this Green Goddess Salad, I knew it would be a recipe I make often! It is clean, easy to make, and tastes delicious as a salad or to eat as a dip with crackers!
Ingredients:
Salad Base:
- 1/2 cabbage (green)
- 1 whole English cucumber
- chives (green onions) I used one bushel
Dressing:
- Spinach or Kale (1 bag)
- 2 avocados
- 2 tablespoons minced garlic
- 1/2 small or 1 large shallot
- 1 tablespoon ACV
- 1 whole lime (or lemon)
- 1 handful of pistachios (I like a big handful)
- 1 tablespoon EVOO or avocado oil
- 1 tsp Himalayan salt
Directions:
- Chop cabbage into small pieces and put in a large bowl for base
- Chop cucumber into small pieces and add to the base
- Chop chives/green onion into small pieces and add to the base
- For the dressing, add all ingredients to a large bowl or blending container. Blend until smooth (if in a bowl, use a hand blender). I find the hand blender easier because the ingredients don’t get stuck.
- Add base dressing to a large bowl of salad.
- Enjoy as a salad or as a dip with pita chips or crackers.
