Zucchini Bread Breakfast Cookies
My goal is to help busy families create meals that are easy to tackle! I also want to make sure we are getting in our veggies and fueling our body the right way, so we are winning in so many ways with this recipe! It is healthy, easy to make, you get your veggies, and may I add, it tastes like a treat?!
You can eat this cold or warm! I hope you enjoy!
Ingredients: (Serving size approximately 3 cookies)
- 2 ¼ cups old fashioned oats
- 1 cup oat flour or whole wheat flour
- 1/4 cup ground flaxseed
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/2 cup unsweetened applesauce
- 1/3 cup raw honey
- 4 tablespoons melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ¼ cup shredded zucchini (squeeze out excess moisture)
* Optional 1/4 cup chopped walnuts
Directions:
- Preheat the oven to 360°Line two baking sheets.
- Place all ingredients in a large bowl and mix until well combined. Scoop the cookies with an ice cream scoop or tablespoon, placing about 2 tablespoons of cookie dough per cookie. Slightly flatten and shape the cookies as they will not change during baking.
- Bake the cookies for 12-15 minutes, or until lightly golden. Cool on a rack, then store in an airtight container for up to 3 days.
