Double Chocolate Banana Muffins
Sometimes that sweet tooth can be intense and chocolate is loved by everyone in my home. So I was on a mission to have a recipe that we can all enjoy as a healthy treat! With a few bananas and other healthy ingredients, a perfect, satisfying, and guilt-free dessert is made!
INGREDIENTS: Makes 16
- 3 Bananas, medium ripe
- 1 large Egg
- 1/4 cup Raw Honey
- 1 tsp Baking soda
- 1/2 cup Chocolate chips (I use soy free, dairy free ENJOY brand)
- 1/2 cup raw Cocoa powder
- 1/4 tsp Himalayan Salt
- 1 tsp Vanilla extract
- 1/2 cup Almond Flour
- 1/2 cup whole wheat flour
- ½ cup unsweetened applesauce
- 2 tbsp Extra Virgin Olive Oil
- 1/2 cup plain greek yogurt
Directions:
- Preheat the oven to 350 degrees.
- In a medium bowl, add banana and mash with a fork.
- Add in egg, honey, ¼ cup of chocolate chips, cocoa powder, salt, vanilla extract, flour, apple sauce, olive oil, and Greek yogurt.
- Mix well and spoon evenly into the muffin pan (I use a silicone muffin pan).
- Sprinkle the remaining chocolate chips over the mixture.
- Bake for 25 minutes.
- Let cool before eating.
