Chickpea Blondies
Our family loves desserts and treats. We are also a huge fan of peanut butter and the kiddos love chocolate. I have a goal of finding healthier alternatives to yummy treats and when I saw you can make a dessert out of chick-peas, I was hesitant!
We gave it a go and I was certain, my picky 9-year-old would refuse to try this because he saw the chickpeas in the recipe. To my surprise, after trying his first bite, we went for two more servings. If my 9-year-old can enjoy this, I am pretty sure anyone can!
Ingredients: (Makes approximately 16)
- Cooking Spray
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1/2 cup all-natural peanut butter (or almond butter)
- 1/3 cup raw honey or agave
- 2 teaspoons vanilla
- 1/2 tsp Himalayan salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/3 cup soy-free, dairy-free chocolate chips
- Coarse Himalayan salt, for topping
Directions:
- Preheat the oven to 350 degrees F and spray an 8×8 inch pan with nonstick cooking spray.
- In a food processor, add all ingredients except chocolate chips and process until the batter is smooth.
- Add chocolate chips and mix with a spoon or spatula.
- Spread batter evenly in prepared pan
- Bake for 20-25 minutes or until the toothpick comes out clean and the edges are slightly brown. The batter may look underdone, but you don’t want them to dry out!
- Cool pan for 20 minutes on a wire rack.
- Sprinkle with sea salt then cut into squares.
Store covered in the fridge for up to 3-5 days.
