Sausage, Egg, and Veggie Breakfast cups
I am a sucker for breakfast foods. I am also a sucker for EASY recipes that are convenient for me to grab and go! So I am excited to share my sausage, egg, and veggie breakfast cups recipe with you!!
Ingredients:
- 5 egg whites and 4 whole eggs
- 1 package cauli rice broccoli (I get mine from Walmart- or you can use 1/2 head of riced broccoli and cauliflower)
- 1 cup shredded cheddar cheese (or your favorite shredded cheese)
- 1 lbs turkey sausage or chicken sausage
- 1 tps pepper
Directions:
- Preheat oven to 375 degrees
- cook sausage until cooked well (follow package directions)
- In a medium bowl, add eggs, cooked sausage, cauli rice with broccoli, 3/4 cup shredded cheese, and pepper.
- Spray muffin pan or sheet with Olive oil spray
- evenly distribute the mixture in each muffin slot.
- Cook for 25-30 minutes, or until fully cooked and slightly tan on top.
- After removing from oven, sprinkle remaining cheese on each egg cup.
- Let cool prior to eating!
- ENJOY!!
