Chicken Sausage & Cauliflower Stir-fry

I am all about quick and healthy meals. I mean, our lives are busy enough so do we really want to spend hours just cooking meals?! NOPE! I’d rather be spending that time with family and getting all the other things checked off my to-do list! I am excited to share my easy chicken sausage and cauliflower stir-fry recipe with you!

When I went to the store, I found some pre-made chicken sausage that has no nitrates! WINNING! You can find this or another similar brand at your local grocery store!

So I used this chicken sausage that I can easily cook up, along with stir-fry to create a perfectly healthy and quick meal that the family enjoys!

This is a low-carb meal also, so it is a great dinner recipe if you are watching heavy carbs in the evening!

Ingredients:

  • 1 pack of chicken sausage (choose the flavor of your choice)
  • 1 head of cauliflower (or 1 frozen bag of chopped cauliflower)
  • 1 tbsp extra virgin olive oil
  • 1 cup of a frozen bag of peas/carrots/corn
  • 1 TBSP Braggs Liquid Aminos
  • 2 TBSP coconut Aminos
  • 1 TBSP minced garlic
  • 1 TBSP chili garlic sauce

Directions:

  1. Cook package chicken sausage over the stove in a skillet on medium for 8 min (or until cooked, turning frequently) OR by using an air-fryer. If you use an air fryer, simply place chicken sausage in air-fryer for 5 minutes at 350 degrees. Set aside.
  2. Chop a head of cauliflower into small pieces (or use frozen bag of pre-chopped cauliflower) and cook on a skillet over the stove on medium heat with 1 TBSP olive oil and minced garlic. Cook for 3 minutes.
  3. Add chili sauce, Braggs and coconut Aminos, and 1 cup frozen pea/carrot/corn mixture into cauliflower mix and cook for approx 3 more minutes, stirring frequently.
  4. Add 1 cup of cauliflower mixture on a plate and top off with 1 serving chicken sausage (cut into 1/2 inch pieces).
  5. Serve and enjoy!
