Sausage, Egg, and Veggie Breakfast cups

I am a sucker for breakfast foods. I am also a sucker for EASY recipes that are convenient for me to grab and go! So I am excited to share my sausage, egg, and veggie breakfast cups recipe with you!!

Ingredients:

  • 5 egg whites and 4 whole eggs
  • 1 package cauli rice broccoli (I get mine from Walmart- or you can use 1/2 head of riced broccoli and cauliflower)
  • 1 cup shredded cheddar cheese (or your favorite shredded cheese)
  • 1 lbs turkey sausage or chicken sausage
  • 1 tps pepper

Directions:

  • Preheat oven to 375 degrees
  • cook sausage until cooked well (follow package directions)
  • In a medium bowl, add eggs, cooked sausage, cauli rice with broccoli, 3/4 cup shredded cheese, and pepper.
  • Spray muffin pan or sheet with Olive oil spray
  • evenly distribute the mixture in each muffin slot.
  • Cook for 25-30 minutes, or until fully cooked and slightly tan on top.
  • After removing from oven, sprinkle remaining cheese on each egg cup.
  • Let cool prior to eating!
  • ENJOY!!

If you want to get a silicone muffin sheet like I have, I HIGHLY recommend it because it is so easy to use and I have never had any issues with my food sticking!!
