PROTEIN (SHAKEOLOGY) BANANA BREAD

Ingredients:

  • 1 cup ground up oatmeal
  • 3/4 cup shakeology (vanilla, chocolate, or cafe latte)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 ripe bananas
  • 3/4 cup plain Greek yogurt
  • 2 large egg whites
  • 1/4 cup unsweetened applesauce
  • 1/3 cup stevia
  • 1 cup chopped walnuts, divided (optional; my family isn’t big on nuts in our breads)

Instructions:

  1. In a medium-sized bowl, whisk together oats, shakeology, cinnamon, baking soda, and salt. Set aside.
  2. In a large bowl, mash bananas, then mix in yogurt, eggs, applesauce, and stevia.
  3. Pour dry ingredients into wet mixture, stirring until just incorporated.
  4. Fold in most of the walnuts (again optional). Then pour into a greased bread pan. Sprinkle the remainder of the walnuts over the top.
  5. Bake at 375 degrees for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool for 10 minutes. Enjoy!
