Homemade Guacamole

I know many people LOVE their avocados. As weird as this sounds, I was never a fan.  I had a hard time with the texture. I edned up eating them 2 times during my 21 day detox called 21 Day Ultimate Reset! It was a very strict plan, so I was limited on what foods I could eat, so it was included in my salads, but would never eat it alone! Now that my tastebuds have changed since I fuel it with good food, I am excited to share my homemade Guacamole Dip recipe with you!

HOME MADE GUACAMOLE DIP

Ingredients:
  • 3 medium avocados
  • 2 cups nonfat Greek yogurt
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 2/3 cup onion, diced
  • 1 cup roma tomatoes, diced
  • 1 teaspoon jalapeño, chopped
  • 1 tablespoon cilantro, minced
Directions:
  1. Add all the ingredients to the bowl of a food processor.  Pulse until well combined, but not pureed, so there is still a little texture.
  2. Serve and enjoy with whole wheat pita chips!
*Squeeze 1 lime on top (will help keep its color longer).
If you want the dip to maintain its color longer, the less air that touches the avocado, the longer it will stay green.  You can cover the dip with a pastic wrap and refrigerate.
