Greek Salad

Serves 2

Salad:

Ingredients: 
  • 3 cups of romaine lettuce
  • ¼ cup reduced-fat feta cheese
  • 2 tbsp kalamata olives, sliced and pitted
  • 2 tbsp  green olives 
  • ½ small purple onion into small slices
  • 1 whole cucumber, peeled and diced
  • 1 cup baby red tomatoes
 
Directions:
  1. Combine all ingredients together and add the dressing.

To make dressing:

Ingredients:

  • 1 tsp dried oregano
  • 1 tsp Himalayan salt
  • 1/2 tsp pepper
  • 1/2 tsp dijon mustard
  • 2 cloves minced garlic
  • 1/4 c red wine vinegar
  • 1/2 C extra virgin olive oil

Directions:

  1. Mix salad ingredients together in a bowl.
  2. Add 2 tbsp dressing and serve.
