Pumpkin Oatmeal Muffins

INGREDIENTS
  • 2 cups old-fashioned rolled oats, gluten-free as needed
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ¼ teaspoon Himalayan salt
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 egg or 2 egg whites
  • ¼ cup pure maple syrup (or raw honey)
  • 2 teaspoons pure vanilla extract
  • 1 cup unsweetened vanilla almond milk (or any milk- I use fairlife milk)
  • 1/4 cup small chocolate chips (I use soy free, dairy free chocolate chips)
INSTRUCTIONS
  1. Preheat oven to 350 degrees F. Spray muffin pan with non-stick cooking spray. *(The silicone muffin pans work amazing and do not stick!) In a large bowl, stir together oats, baking powder, seasonings and salt.
  2. Add pumpkin, egg, maple syrup, vanilla extract, milk and add-ins. Stir well to incorporate.
  3. Allow the mixture to set and thicken for about 3-5 minutes before spooning into your muffin pan.
  4. Fill muffin cups almost completely full with batter. Top off with chocolate chips.
  5. Bake for 30 minutes and until the center of each oatmeal muffin is set. Allow to cool for 10 minutes before serving.
  6. ENJOY!!

Mashed Cauliflower Recipe

Mashed potatoes are many people’s weaknesses… so let’s make it a little healthier so you don’t have to feel guilty when indulging into your tasty taters!!
What you need:
– 1 head of cauliflower, cut into florets
– 1 tbsp olive oil
– 1 clove of garlic, smashed
– 1/4 cup grated parmesan cheese
– 1 tbsp reduced far cream cheese
– 1/2 tsp kosher salt
What you need to do:
1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil
2. Add cauliflower, cover, and steam until tender, about 10 minutes.
3. Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Then remove from heat.
4. Transfer half the cauliflower to a food processor, cover and blend on high.
5. Add remaining cauliflower, blend until creamy.
6. Blend in garlic, parmesan cheese, cream cheese, salt and black pepper.
7. Top with chives or paprika (optional).

Peppermint Patty Shakeology

Ingredients
-1 cup unsweetened almond milk
-1 cup ice
-½ scoop Chocolate Shakeology
-½ scoop Vanilla Shakeology
-½ tsp. pure peppermint extract
-1 tsp. shaved dark chocolate
-Fresh mint leaves for garnish; optional

Instructions

  1. 1 Place almond milk, ice, Shakeology, and extract in blender; cover. Blend until smooth.
  2. 2 Garnish with chocolate and mint leaves (if desired).

Clean Honey Soy Chicken

These pregnancy cravings keep coming 😉 I have been craving Chinese – but I don’t want the high sodium, high fat, high price of take out…
I whipped this up and the left overs are even better!!!

Clean Honey Soy Chicken

Honey Soy Chicken, Deidra Mangus, brown rice recipes, braggs liquid aminos, top beachbody coach PA, successful beachbody coach PA, elite beacbody coach, Beachbody coach UK, healthy pregnancy, clean eating, weight loss journey, healthy dinner recipes, healthy chicken recipes, clean eating tips, healthy new mom tips, weight loss after baby,

Ingredients:
  • 1 clove of garlic
  • 1/2 cup Braggs liquid Aminos
  • 1/4 cup honey
  • 3-4 chicken breasts
  • brown rice (cooked as per package instructions)
  • 1 medium sweet onion (chopped)
  • 2 cups broccoli (steamed)
  • 2 cups snow peas
  • small package of mushrooms

Directions:

1. Cube chicken breasts.
2. In a large bowl, mix minced garlic, soy, honey and add cubed chicken.
3. Marinade for a few hours.
4. Heat a large frying pan on medium/high heat.
5. Add chicken with all the honey soy marinade to the pan.
6. Cook chicken thoroughly.
7. Add veggies and heat.
8. Serve over rice.

Finding Balance Fitness Challenge

We all know its easy to let life get in the way and we then lose track and site of our own goals.. Life goals, family goals, faith goals, fitness goals, etc.

On another note, I am happy to say it’s still possible to change it all around, no matter how much you feel off in these areas or no matter how far away your goals seem! But the first thing you must do is come to reality and accept the need to change, and take the step to get started on the change!

I personally have needed help in all the areas mentioned above! I am more like 70/30 with my nutrition…  I miss a couple workouts here and there, and sometimes I let the things coming up in life get the best of me. I hate admitting it, but I have to because otherwise, I will not change. So I am taking the initiative to work on myself more than ever NOT just with fitness, but all aspects of my life! I am excited to be more disciplined and find a good balance in my life for myself and my boys! My boys are 4 and 5 years old and it’s time to have a good routine for our family, along with me being the best role model I can for my kids and others around me!

30 days to commit to working out a day is not asking for a lot.. Its 30 minutes that is easily spent instead of watching mindless TV shows, reading books that do not impact your life in any way, or napping… of course we need the right amount of sleep, but many people in this society take naps just because the opportunity is there. Time to take a new opportunity to live a healthy lifestyle and do things that help us live longer!

I gotta just shout this man out right here… Brent has been a HUGE blessing to my life! God definitely put him in my life at the right time. We help each other be better in these areas of our lives.. we motivate and support each other through our faith and fitness journey! I highly recommend if you are in a relationship, work on building each other up because its the best feeling ever when you can compliment and help each other! If you are not in a relationship, find an accountability partner (friend or family member) who you can be on this journey with!

Nutrition is key! Guys, I swear nutrition is one of the hardest parts of this journey. Its easy to stay on, and its easy to fall off when your surrounded by temptations, others who aren’t living the “healthy lifestyle”, and when your “too busy” to eat healthy! This is my “easy healthy” right here! Just to show you, eating healthy does NOT have to be difficult. This is a choice you gotta make and commit to and be sure you eat for the nutrition, not because its a craving. But be aware… just like when you eat bad food and crave more of it, when you eat healthy, you will crave that too!! Your taste buds change according to what you feed your body!

Putting your faith as a priority! Many of us think, we can do this ourselves. NO!!! We are busy, we make mistakes, we stress, and we need to lean on God to pull us through!!! We stress ourselves out more when we try to be too independent! Lets focus on our blessings God gave us, start using the opportunities sitting in front of us to help us become healthier and better role models for our kids and families!
