I am a big fan of Philly Cheesesteaks.. I cannot deny that!! But I am also a big fan of finding healthy alternatives to the fattening food that I enjoy!! So here you go, your healthy version of a Philly Cheesesteak!
3 Green Peppers (sliced in halves and removing the insides)
1 Sweet Onion (sliced and then cut in half)
1 Lbs Minute/Shaved Steak (I used 96% lean ground beef here)
1 Cup Shredded Mozzarella cheese or Provolone / any cheese of your liking
1 Tbs Extra Virgin Olive Oil
1. Saute’ onions on high, in olive oil until they’re translucent
2. Add steak/beef to cooked onions and cook until it’s no longer pink
3. Preheat oven to 325º
4. Fill bottom of the peppers with onion/meat mix
5. Add a layer of cheese on top
6. Cook for 15-20 minutes. Until cheese is melted. If you want a softer pepper, add some water to the bottom of the pan and cover with tin foil.

I’m not going to lie, I have use this excuse as an outlet so many times but in the end, it did me no justice. In fact it held me back from what my fullest potential could be. It held me back from happiness, success, and confidence! Im talking about all areas of your life: Physical, Financial, Emotional, Spiritual, etc!
Part of me sharing my story and journey is to hopefully inspire just one person who truly needs it and has a desire for a great future ahead!
Now that I have shared about my situation with my divorce, I’m also going to share HOW I am going to get through it, along with WHY I needed to let go of my excuses.
3 years ago, I was not in a happy place in my life. I had no confidence, no strength, not much happiness or even hope..
How did I gain happiness, confidence and success?
Over the past 2 years I have given myself to the lord. I decided to take my journey and build a relationship with him. It has been the best 2 years of my life.
How could it be the best 2 years when I’ve been going through so much other struggle and damage in my life?
Because I know God has given me strength, happiness, courage and the ability to believe that I am here for a purpose and that the struggles I am going through will only take me to something so much greater for my future!
I truly believe without God in my life, I would have given up, not thought twice about settling for less, but instead I gained strength to fight harder!
2. My career as a fitness coach.
You may roll your eyes and say oh gosh she’s talking about it again.. And that’s ok!
I truly believe everyone is entitled to their own opinion. But hear me out at least before you roll your eyes or judge.
There are so many different ways that my life has changed since starting this career as a fitness coach 3 years ago.
From finding myself in my own physical transformation and financial freedom, I was also finding confidence and happiness with who I was. I did this by reading and listening to personal growth and development that I never listen to before, because I just didn’t think it was necessary. Here it has completely transformed my life with confidence, Learning to be completely satisfied with the person that I am, and just having such a positive outlook on everything in life.
Trust me I was not always this positive and full of belief! But it changed because of the journey I took. That decision I made for not only myself, but for my family as well.
Physically, ok come on we all know exercise is a stress relief! Why don’t we do it? Because we make excuses as I mentioned above that we just have too much going on or not enough time. Little did we know, we have time to watch TV, mope and lay in bed and complain about our problems, and have long conversations to our friends and family… OK I hope I just made you realize that you have enough time to exercise for 30 minutes LOL.
I’m not saying you have to go to the gym, doing a quick 30 minute workout at home is definitely sufficient! It will relieve your stress, take away the anxiety, and help you become happier and healthier! I did NOT want to workout, but I knew that if I didn’t, that stress and emotion would keep building up, and me sitting here crying about my problems was doing me NO justice!!!
Financially, I was grew up in a family that lived paycheck to paycheck. As I had my nursing career, I did good for myself and family, but never had a savings. We didn’t “struggle” per say, but could not just jump and go on a vacation if we wanted without worrying if we had enough money in our account.
Now that I am raising my boys as a single mother, I can say that I have made a career with doing what I love and am passionate about (health and fitness) to the point that I will be able to provide for my boys, and still give them the life I’ve always wanted to give them. I won’t say it was easy, I mean it took time, sacrifice, and dedication, but the pay off has been such a blessing to us just after 1 year!
Today…Despite the struggles and obstacles that are in front of me, I’ve learned that making excuses will only keep me from more amazing opportunities. Making excuses only stop me from my fullest potential, happiness, and success!
Instead of saying reasons why you can’t, start making them your reasons why you should!
I’m leaving you with this… Do not base decisions or hold back because you feel “It’s not YOUR time” or wait and do it at “your best convenience”. There will never be a “good time” and honestly, this isn’t about you, this is about doing it on God’s timing! Believe His plan and I can promise and reassure you if you trust and have faith, it WILL all work out!!
As a pretty in shape momma and fitness competitor, I have a good idea of what my body needs to maintain and even prep for show time…. but I think its time to change things up a bit and see what else my body is capable of doing! As I prepped for my last 2 Figure competitions, I incorporated BODY BEAST, 21 DAY FIX EXTREME, and INSANITY MAX 30into my regimen, along with clean eating and drinkingSHAKEOLOGY once a day to get my dense nutrition that my body is not getting from our typical every day foods.
I know people think eating our fruits and veggies are just enough, but if you think about how our crops are grown, our soil is not up to par! We lack vitamins and minerals, and when I am drinking Shakeology, it gives me everything, and more! The nutrients are picked from other countries where the soil is best for crops to grow, along with more superfoods, digestive enzymes, pre and pro-biotics, and more! I know if I get too in depth, I may loose people, so Ill keep it simple saying this keeps me up to par with my nutrients and health!
So back to workouts… I always do a variety and its hard to say I have a complete transformation of one fitness program, but I want to not only see what one program can do for me, but also show others what they can do by following a specific program as well!! I love the gym, but sometimes I just can not go.. The daycare at the YMCA is only during a certain time, which is when I’m with my kids or after they are done with daycare when its dinner time… So instead of messing up everyone’s schedule, I can easily fit my home workouts in my schedule, save time, money, and STILL get amazing results!
So it’s time to focus in one 1 program…. My new focus…. BODY BEAST! Yup, I’m going straight up BEAST MODE on ya!! 🙂
What better day to start than Labor Day right?!
Honestly, the parties and get togethers do not bother me.. I have come to realize with my emotional eating and binging that those types of food does not help me get to my goal.. and yesterday my neighbor had a party and I couldn’t even eat all the food because it does not taste as good as it use too! SCORE for me!!!
There are so many reasons for me to start this journey..
I want this for me.. I have a lot of stress and instead of eating my emotions, and doing nothing about it, its time to relieve my stress in a healthier manner! We always go to the easy route and unfortunately, its only temporary and then will make it even worse because your not happy emotionally or physically. So time to have a fresh start!!
Meal Plan Week 1:
Ok so the first half of the day, I’m literally shoving food in my face lol.. healthy food at least!! So my calorie range is around 2000. This is going to be a struggle, but I WILL make it work! It’s scary to see all those calories when I am not use to intaking that much, but I have faith in the program and know if I follow it correctly, amazing results are coming my way!!! Lets do it!!

Oh my goodness was this business trip absolutely amazing!! I cannot be more blessed to have joined such an amazing company just 2.5 years ago and took a huge leap of faith into the unknown as a mother, wife, and nurse. THURSDAY- DREAM TEAM “Recipe For Success Presentation” and Opening Day!!
One opportunity I was given was to speak at our Summit event with the #1 team in the company and give my recipe for how I got to where I am in my business today… I presented in front of 1500 people almost and that may be the scariest thing I have EVER done!! BUT… It was one of the most awesome things I have done considering my WORST fear is Public Speaking!

Does it mean your OVERWEIGHT because your THIGHS TOUCH?!
Ok, so some of you may think I am completely silly for this post, but as I was talking with a friend who is on her own weight loss journey/fitness journey with me got on the subject of our thighs touching. She made a comment that hers always have touched and then I got to thinking how often I hear “I hate that my thighs touch” or “I wish my thighs wouldn’t touch and I would be skinny”.
After thinking about it, I thought about how I say it all the time… “I wish my thighs wouldn’t rub together so I’m not having my shorts ride up!”… yup I said it and you females know EXACTLY what I’m talking about!
Then I was doing my morning cardio workout at home INSANITY MAX 30 (I love getting a good workout in first thing when I wake up when the kiddos are still sleeping) I realized that although my thighs touch, that does NOT mean I am over weight! In fact, I am 8 weeks out from an NPC Figure Competition and I have a good bit of muscle in those legs, but YES, they still touch!!
I want to help you understand the importance of begin FIT vs SKINNY! Now, our genetics totally play a role in our bodies to an extent, but it does NOT define who we are!! There is still 80% nutrition and 20% exercise to help you create how you look.
Our society has showed what the typical “skinny model figure” should look like. Victorias secret models for instance… and I am NOT disrespecting them by any means because those women are absolutely gorgeous, BUT, our bodies are not meant to look like that on a normal day. It is time to focus on what a HEALTHY LIFESTYLE looks like!
Yes, we have some curves, and our men love that! We can have curves and still have abs, tone legs, and arms. Its all on what you make it! This is what I call a healthy lifestyle which is what I do to get to where I am today:
Clean eating- Skip the easy fast food and go for quality! Easy isn’t always the best! What we put in our bodies will show on the outside…. our body fat, our skin, etc.
When I grocery shop, I shop ALWAYS on the outside isles and work my way in! The healthiest and cleanest foods is found there!
Fresh fruits, fresh veggies, lean meats, then inside isles (you do NOT need to go down every isle!) you will find you Extra virgin olive oil (EVOO), coconut oil, seasonings (my cinnamon for my MAN CAKES), and natural PB!
Exercise 30 minutes min a day! I am not asking you to spend hours at the gym! In fact, the way I reached my goals to get to where I am today is based off of my home fitness programs with Team Beachbody! Currently I am training for my 2nd Figure Competition and just finished INSANITY MAX 30 as my cardio and BODY BEAST for my weight training. Now I am continuing Body Beast, but also incorporating the brand new 21 DAY FIX EXTREME which is a total body workout that is 30 minutes long and includes weights. Having a variety of exercises will trick your body and continue increasing your metabolism and burn calories as you are working different muscle groups! This is what I do to keep myself from plateauing.
SUPPORT- A huge part of my success comes from getting 1:1 support and motivation in my fitness challenge groups. As a fitness coach and being on my own fitness journey after having my second child, I realized that this area is what got me to my goals. It is what most people lack when they are on their journey and without support, many lose confidence, hope, and the ability to commit. My groups are held in a closed group on Facebook so ONLY those challengers who are ready to commit have their spot with me so I can focus on each person to achieve their goals.
Once you have the nutrition, the exercise, and the support, you will create success! Iv’e been through the journey myself as I said before, but have now helped hundreds of people with their journey as well and these transformations are not temporary, they are long term! So here we go, throw out the diets, starving yourself and time to do it the right way!!

I am seriously ecstatic with the news I got yesterday!!! I know our team Forever FIT has been growing tremendously and is filling up with so many driven, dedicated, and passionate people, but it is going to a new level!!
Before I get to the nitty gritty, I have to say, joining Beachbody and working for this company has changed my life in so many ways! I started my journey for myself, wanting to lose weight after having my 2 boys and wanting to gain control of my addiction to food. I was one of those bingers who would do the FAD diets, starve myself, then gain it all right back… NOT COOL! I was over it and wanted the change, so I found Beachbody and the home fitness programs we have…. I took a leap of faith, joined a challenge group (closed group on Facebook that I check into daily to stay accountable and get tips, recipes, etc) and started incorporating SHAKEOLOGY into my nutrition regimen daily to give me the super foods and dense nutrition I was not getting from my every day foods. As I found my body changing, and my family getting better eaten habits, I knew sharing my journey with others was exactly what I wanted to do! Last week, I had an amazing opportunity to attend my very first Leadership Retreat with Team Beachbody which was held in Scottsdale, AZ! I left on Wednesday and was able to go a day early to relax and enjoy an extra day thanks to Beachbody for providing their Elite coaches with this present! I seriously have never felt so loved as I do with Team Beachbody as a company! Its one thing to treat your employees well, but I was literally showered with gifts every day, and they treated me like royalty!

They are such amazing leaders and here for the right reasons! Thursday night was a night dinner with the crew for opening night!! I must say this dress was by far my favorite ever!! Rent the Runway is a must if you have the opportunity and want to dress up!!
And yes, a little more fun at the pool!! Yes, I did have a drink for myself even prepping for my show! TIP*** Vokda and water with a lemon will do the trick and not a lot of calories!!
Another general session with Beachbody!! It was so great to see my coach and cousin up on stage working her magic!! Melanie, you are such a great leader and mentor!!! LOVE YOU!!!!
Oh so much I can say about this girl!! Katy, one of my success partners in crime has been such an inspiration to me! She has gone through more than anyone I know but stays stronger than anyone!! She had such an amazing speech on stage about her journey and struggle through having stage 4 lymphoma but is now a survivor and fought through like no other!!! So blessed to be surrounded by such amazing people!!!

Friday was a night out with the Dream Team!! We had a dinner and spent some QT together, which was definitely needed!!!
Saturday morning, our workout was a little different, but tons of fun!! We did some exercises at the spa and a little surfing!!!
Had a great time with this group!!!
Our last night at leadership was our Sheriff and Outlaw party— Nothing like a little dress up and dancing before our retreat ends!! We definitely ended it with a bang!! hehe!!

Ok so I love to dance…. may be the funniest pic… I was caught in action!! I am not sure what kind of move that is, but I swear I know how to dance hahah!!!!
As you see, this entire trip was something amazing!!! Something not everyone gets to do often, but Beachbody gives these trips as a Thank You for working hard and dedicating ourselves to help end the trend of obesity and change lives! So far this year, Beachbody has given me a trip on a Caribbean Cruise, Vegas, and now Arizona! I must say Im pretty thankful for everything they have done for me, along with giving me the opportunity to have financial freedom for my family!
I am so excited to take in all the information I learned and share it with my team and continue making a difference in people’s lives!!

When people say you get moody, emotional, and feel like you don’t even live in your own body for the last few weeks of your show, did they mean starting 8 weeks out?! I cannot believe how different I feel! I am not sleeping, I dream like 5 dreams a night lol, and am more emotional than when I was pregnant!
I give competitors so much credit for being able to do these shows on a regular basis! Your body goes through so many changes its unreal! Its one of those things where you just have to experience it to understand what I mean…. On another note, this has definitely been rewarding and worth it! I never thought I would be able to stick with something so strict and have this much will power and dedication. Prepping for a show gives you this huge sense of accomplishment that is just amazing!!
This weekend, I did order all my stuff I need for my show! I got my suit ordered and is being made right now, I ordered my cute robe, my jewelry which came in today, and also my heels! EEEEEK this is seriously so exciting!! Reality is officially hitting!!

I traveled home to my moms this weekend and am so proud of how dedicated I have been!! Its crazy how you don’t think you can do something until you do it! It really changes how you believe in yourself!
Every morning I got up at 5 am to do my cardio and get a little work done!
I’m not going to lie, I was full of energy over the weekend…. but its slowly fading away!! I am pretty sure I wouldn’t have made it without my E&E pre workout formula!
Not sure what anyone else does on the weekends, but I was partying at the gym, then grilling at night lol!! It feels good to be good!! I feel great, satisfied… and although I am not doing the things many others do on a Saturday night, I know when Im on stage, I will not regret any minute spent prepping for this show!! Its all about setting yourself up for success!!
Totally needed a rice cake or 2 for energy before hitting up the gym at night!

One thing I got the opportunity to do this weekend was Sunday, there was a bodybuilding show by my moms house that was right about the same level as what I am doing… It was NPC and a smaller show, so it really helped me see what I am suppose to look like, but more importantly, see them pose up close so I can nail that part down.. Posing is probably the most difficult thing for me right now and I just still shake like crazy!

Here is my meal plan/workout schedule for the week:
Monday: BACK DAY
Am- CARDIO when waking up (plyos)
Breakfast- 8 egg whites, 1/2 cup oatmeal, vanilla and cinnamon (YUP THE MANCAKES EVERY MORNING!)
Lunch- grilled chicken and green beans, sweet potato
Snack- Shakeology, raw almonds
This was my first full week of training myself for my show, and Im pretty excited that I am extra motivated to push as hard as possible!! I will start carb cycling next week and cutting out my PB2 and replacing 1 SHAKEOLOGY with Whey Protein. 🙂

As I am prepping for my show, I also run challenge groups on Facebook for those who want to workout from home and want accountability, support, motivation, tips, etc to reach their goals!
It seems like there is so much to do to create that healthy lifestyle, but in reality, if you can just follow a few tips and be consistent for even 21 days, it will become a habit and second nature to you! Yes, 21 days is all it takes to create a habit!
I have found when starting my own journey, that when you set goals for yourself and put a date to when you want to reach those goals, you are more likely to succeed. When you put a dead line on your goals, you are showing importance and will make them a priority!
So, what are the first steps to creating this healthy lifestyle??
#1. Set Goals and put a date on it! Make them realistic and attainable so you are able to reach them without getting frustrated that they seem so far away!
* TIP Setting lots of small goals will help you feel more accomplished and like you are begin successful throughout your journey!
#2. Find an accountability partner- finding a family member or friend who wants to join you is a great way to stay on top of your regimen! Help each and give support to one another, especially when those obstacles come around and get in the way of your goals! If you have that extra support, you are more likely to follow through and succeed!
#3. Have A WHY- Your WHY to get started on this journey should be important enough that any obstacle will not effect you during your fitness journey. For me, my kids are a why for me. Having them grow up with healthy habits will prevent obesity and making the right choices when they become independent! Also, I am doing this for myself so I can feel confident about myself and I want to be able to put any outfit in my closet on and not have to change 100 times because I do not feel comfortable! Im sure you women know what I mean by this lol!
#4. Find a workout regimen that works for YOU- As a mother of 2 young boys, its not always easy to just get up and go to the gym whenever I am able, so I use home workout programs to reach my goals! I don’t have to drag my kids out of bed or find a sitter while Im working out.. BONUS- they join me in my workouts and see how mommy is getting healthy!
Its amazing how the results come when you have a program telling you exactly what to do and take less breaks! These programs even come with a nutrition guide to help you get 100% results you are looking for! Yes, there are programs out there for EVERYONE!
I have finished programs such as T25 (25 minute workouts that include 5 weeks of cardio and 5 weeks of cardio with weights. Modifications are great and can be fore beginners or advanced athletes), P90X3 (30 minute workouts that include a variety of exercises from cardio, kickboxing, weight training, yoga, and more), PiYo (Pilates and yoga into faster pace movements that will improve your strength, flexibility, and definition. This program also is great for people with knee or back problems- it is low impact and not hard on your body). Turbo Fire is another program I used that is high intense cardio dancing that is fun and up beat! Chalene Johnson is the creator and is so motivating and keeps you going strong throughout these 20-55 minute workouts! 21 Day Fixis a great program that has 30 minute workouts and a variety of exercises (cardio, cardio with weights, upper focus, lower focus, yoga, pilates, and plyo) that will build your strength and tighten your entire body! Great modifications to all these workouts! This program is also portion control focused and has an amazing meal plan that include color coded containers for your food!
#5. Don’t forget nutrition is key! Nutrition is 80% of your results, so if you workout and eat unhealthy, you may notice yourself stuck in the same place and not reaching your goals!
1 big help with my nutrition I have had was incorporating Shakeology into my nutrition regimen. Shakeology is a health shake meal replacement that I use in place of either my breakfast, lunch, or evening meal to help with my cravings, energy, and bloating! It is NOT a protein shake, as it has many health benefits and high quality nutrients to naturally improve many aspects to your body and health!
This is one of my favorite videos that show what you are really getting out of every shake… It the nutrients that you do not get from every day foods you eat to make such big changes to your lifestyle!
Instead of fast food, this has become my fast food for half the price! It comes to my door every month so I do not have to even waste gas on getting these 30 extra meals a month!
#6. Prepare to succeed! How do you prepare to succeed? Well, for me, I set myself up for success every week by meal planning! I take 1 day a week to plan my entire week out. There is no more making excuses for not having my food handy, or not knowing what to eat because I make a meal plan and prep my food and it is already in separate containers and ready to go!

**TIP** Shopping at the grocery store on the outside parameters are where I find all my healthy and natural foods that are not processed and full of chemicals!!
#7. Eat every 3 hours- Why is it so important to eat every 3 hours? Our body is just like a fire… in order to keep it going, you have to feed it. If you don’t give a fire fuel it will burn out right?? If you do not give your body healthy foods, it will also burn out and will use muscle as energy and store fat. Here is a great picture to show you what I mean!
#8. Drink Water- If at all possible, drink water!! So many reasons and benefits to water!!!
**TIP** how to know how much water you should drink daily- Take your weight and divide by 2 and turn that number into ounces! That is how much water in ounces you should drink!
Example. I weight 130 lbs. Divide 130 by 2 and get 65. I should drink 65 ounces of water daily!
#9. Stay Motivated- Some people may ask, how the heck do I do that?
I have found keeping motivational quotes and pictures that I want to look like on my phone helps so if I am out and about and having an urge to give into temptation, I pull out my phone and look at these motivational quotes and pictures!
These are also kept on my fridge where I can see before again, giving into temptation!!
One of the best ways I have found motivation and support is my challenge groups I hold on Facebook! They are a closed group where I work 1:1 with my challengers to give them daily support, motivation, and accountability to help them reach their goals! These groups are what got me started on my own journey and I couldn’t be where I am without them!

#10. Positive Attitude- Yes, keeping a positive attitude about your journey and believing in yourself will go a long way! If you don’t believe in yourself, how are you going to get there?
