Peppermint Patty Shakeology

Perfect mix of holiday cheer and chocolate craving buster!

Peppermint Patty Shakeology

Ingredients
-1 cup unsweetened almond milk
-1 cup ice
-½ scoop Chocolate Shakeology
-½ scoop Vanilla Shakeology
-½ tsp. pure peppermint extract
-1 tsp. shaved dark chocolate
-Fresh mint leaves for garnish; optional

Instructions

  1. 1 Place almond milk, ice, Shakeology, and extract in blender; cover. Blend until smooth.
  2. 2 Garnish with chocolate and mint leaves (if desired).

Spring Into Health With Your Fitness Journey

Spring is JUST around the corner and I know it has been so easy to hide our body in our clothes from the winter… I don’t know about you, but I am all in for feeling healthy and looking healthy in my sun dresses, tank top and shorts, and bikinis!!

I am so excited that as an online fitness coach, I have the ability to mentor people from all over the US and Canada on their fitness journey by running my private groups in a closed group to help give EVERYTHING needed to reach those BIG fitness goals!!

So many people try on their own and are not successful with their fitness journey for a few reasons…

  1. They lack the nutrition- People cut out carbs, calories, and starve themselves for a quick fix… little do they know, that the weight loss (if it comes off) is only temporary and when you start eating again (because you cant live like that), you gain it back and sometimes more than you lost!
  2. They lack the workout aspect- Nutrition is key, but people do not realize the impact of working out actually does!! You cannot just eat right and expect to get that nice tone body! Exercising increases your metabolism and will help improve your energy, your confidence, and how you feel inside and out!!
  3. They lack support and accountability- So many do not have support… they are on this journey alone which is easy to lose motivation when you struggle.

Maybe these reasons you have failed in your past are relatable. I can say I have failed in my fitness journey so many times!! But I am also proof that you can move past your failures and let your failures be a learning experience to be successful!

Overnight Oats Recipes

I kept hearing about this overnight oat thing, and I’m like, I like my oatmeal warm??? Little did I know how amazing these bad boys are!! I am so glad I decided to go for it and try it for myself!! Seriously, this is such an easy, healthy and yummy breakfast!! So here are the two I made yesterday!! Both are pretty darn amazing!! Who knows, maybe it was just the cook! Lol!
Over night oats, traill mix healthy, Deidra Penrose, clean eating tips, healthy snack recipes, healthy breakfast ideas, healthy mom, healthy nurse, almonds, cinnamon, dried cranberries, greek yogurt, almond milk, fresh blackberry recipe, pecans, healthy granola recipe, agave nectar, beachbody coach PA, online health and fitness coach, nutrition, weight loss journey
Ingredients:
  • 1 cup plain nonfat Greek yogurt
  • 1/2 cup almond milk
  • 1/2 cup oats
TOPPINGS
  • Blackberries (1/4 Cup)
  • Maple Pecan granola (2 tbsp)
  • Pure maple syrup  (1 tbsp)
  • Cinnamon 1/2 tsp
Directions:
  1. In a medium bowl, mix together yogurt, milk, and oats . Add berries, cinnamon, pure maple syrup, and granola at this point if desired.
  2. Divide into three jars or containers, and refrigerated at least 4-6 hours or overnight.

  • 1/2 cup oats
TOPPINGS
  • Trail mix (cranberries, golden raisins, almonds, sunflower kernels, and pepitas (1/4 cup)
  • Agave nectar (1 tbsp)
Directions:
  1. In a medium bowl, mix together yogurt, milk, and oats . Add trail mix and Agave.
  2. Divide into three jars or containers, and refrigerated at least 4-6 hours or overnight.

Blackened Chicken

Ok sometimes finding chicken recipes can get tough.. I mean, you can only eat so much plain chicken before you get bored out of your mind with it right?!

Well, here is a new recipe for you that I made that you can enjoy!! Tonight I made these Blackened Chicken Fajitas with shredded cheese, guacamole, salsa, Greek yogurt and it was bomb.com!!

Ingredients:

  • 4 skinless chicken breasts
  • 3 Tablespoons extra virgin olive oil
  • 1 Tablespoon onion powder
  • 1 Tablespoon garlic powder
  • 1 Tablespoon paprika
  • 1 Tablespoon ground white pepper
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • ¼ teaspoon cayenne pepper

Directions:

  1. Prepare grill on a high heat with lid closed (or use George Forman grill like I did :))
  2. In a large ziploc bag add the chicken.
  3. Pour the olive oil in and coat the chicken.
  4. Add all the spices and seal bag. Toss chicken in spices until fully covered.
  5. Toss chicken breasts onto grill, then turn down to a low heat. Close the lid.
  6. Cook for 5-6 minutes then flip the chicken. Cook for another 3-4 minutes or until center is just barely pink.
  7. Then it’s ready to eat!
  8. ENJOY!!

Spring Cleaning with Your Fitness Journey!

Its so easy to let go of those health and fitness goals when the winter is here. We are easily covered up by those big sweaters and sweatpants and no one sees us in bathing suits at the beach.  But now that spring is here and summer is right around the corner, those bathing suits are coming out! Do you want to have to be covered up by shorts and pants or do you want to feel confident and sexy in your 2 piece or cute little summer outfits?

I don’t know about you, but I’m game for feeling good about myself! Nothing is sexier than a confident woman! When you do not like the way you look, your face will show it, and everyone (including your kids) will sense that insecurity!

It’s time to set some goals, make an action plan, and start taking ACTION!!

  • When I say set goals, I mean think of your long-term goals and short-term.  Write them down on paper and put a date on it! When you do this, you are giving your goals a sense of urgency! Even better, when you set your goals, along with putting it on paper, put in on your phone or somewhere you will always see it! The more you see it, the more you think about it. The more you think about it, the more likely you will stay accountable!
  • When making an action plan, I mean schedule out what you will do to reach those fitness goals! For me, I have a schedule of my workouts, I make a meal plan, and put everything in stone of what I WILL be doing to reach my goals… or should I say on paper?!
  • Taking action is sometimes the hardest to do! Like people say, it’s easier said than done! BUT, when you do the first 2 steps, your more likely to stick to your plan and make it happen!  How do I take action?
  1. I set an alarm and wake up at 6 am every morning… well almost!! Im human, not perfect lol! But I do get an A for effort!!
  2. I meal prep every Sunday so I am all set for success!! I take about 3 hours total on Sundays after church to get my groceries, make my meal plan on www.picmonkey.com, and start cooking away!! I love listening to personal growth and development every single day also to help me stay motivated and excited about my fitness journey! Some podcasts I listen to are Chalene Johnson “The Chalene Show” and MWF Motivation! Seriously, before you knock it, go give it a shot! It will change your life!!
  3. Positive self-talk!! Yes, you heard me!! Its unfortunately so normal to talk ourselves down, and talk ourselves out of doing things that we want to accomplish! Why I do my personal development and growth is because it has helped me completely change my mindset! It helps me remember to give myself positive talk and celebrate all my small successes along the way! Each morning, I will look in the mirror and tell myself what I AM… I am confident, I am happy, I am successful, I WILL conquer today.. and I will tell myself what I will achieve!! It may sound crazy, but your results will come from what you tell yourself! If you talk yourself down, you will become negative.. if you talk yourself up, you will find yourself being successful!!

So lets start NOW!! Now no better time will come! If you wait for the perfect time, you will be waiting a very long time!!

I am excited to start my new 60 day challenge with Hammer and Chisel where I will be incorporating cardio, weight training, and clean eating! I am a HUGE gym fan, so this home fitness program is a perfect way for me to have that similar atmosphere and workout with amazing results!! With my clean eating, you will notice in my meal plan below for this week, I drink Shakeology every day religiously and I absolutely love the nutrition benefits I receive! Its one thing to get a protein shake in.. it’s another to have a drink full of dense superfood nutrition! People do not realize how our crops are grown with our soil that is not dense and full of nutrients as it was 30 years ago. I understand some people like “whole foods”, but Shakeology was specifically made for those who DO care about how their veggies and crops are grown as they are picked from areas all over the world where the soil is best for growing crops!

Get ready to feel sexy, confident, and happy in your new summer body!

You may or may not be dreading summer as you know its time to get out the short shorts, crop tops, bikinis, or you just always wanted to be able to wear one, but never had the confidence to.  Well… I will say its NEVER too late to start moving towards those goals to feel good, sexy, and confident not only in your clothes, but in your own body in general!

So many suffer from depression because they HATE the way they look and feel.. Some due to medical problems we cannot control, but what about the things we CAN control? Why not start TODAY moving towards our goals to feel like that person you never thought you could feel like?? To have that confidence you never thought you could have? To wear those clothes you never thought you could??

It’s time to star making better choices every day to help you get closer to that happy place in your life!

How to get to your happy place physically, emotionally, spiritually:

  1. Get in a workout at least 4 days a week- Wether its 20-30 minutes long, believe it or not, that 20-30 minute workout will make a huge difference in your long term success and make you feel amazing, gain more energy, and be less tired! Guess what?? You don’t have time to go to the gym? Don’t worry, thats why we have HOME FITNESS PROGRAMS that give you EVERYTHING you get at the gym, plus more!!   2. Eat 5-6 Healthy meals a day- Yes, you eat healthy, you fuel your body right, you will feel good, have more energy, and feel good about the success you have of being healthy!! Seriously, it just makes us happier people when we are healthier!
  3. Journal- Yes, get a journal and write in it regularly! This is going to allow you to get your feelings and emotions out, maybe time for you and Jesus, or to track your daily activity with nutrition and exercise! It may sound silly, but coming from my own experience, it has made a huge difference in my success in all areas of my life! Don’t knock it til ya try it!
  4. Positive talk to self- Seriously, how many times do we talk down to ourselves, doubt ourselves of what we are capable of, talk  ourselves out of things we want in life? Instead of tearing yourself down, build yourself up!! Every morning, go to your mirror, and talk to yourself in a positive way! Tell yourself you are beautiful, you are smart, you will win the day, you are worth it, tell yourself what you WILL accomplish! Then at the end of the day, go over the things you did accomplish or any small successes you can celebrate to keep that positive mindset going!
  5. Improve your FAITH- You may not be a believer, but for those who are (or aren’t), its never too late to build a relationship with the Lord! I didn’t start until about 2 years ago, and these last 2 years of having faith, belief, and support from God has been the best 2 years of my life! Despite my struggles and obstacles (battling through a divorce, moving and purchasing my house on my own, just to name a few lol), I would not be where I am today holding my head up if it weren’t for giving my problems to God and allowing Him to help me through my struggles in life.. and it helps so much that I had amazing friends who are believers to help me through and support me and encouraging me through my struggles!
  6. READ or LISTEN to Personal Development/Growth- Call me crazy for being so positive, but again, this has impacted my life more than anything! People are so quick to waste time on a TV show, nap sessions, phone calls that do not impact your life in any way, shape, or form… in fact, majority is about gossip– Yea, sad but true!  Instead, why not use your time you do have wisely to put positive words into your mind! Things that will help you in life.. cuz you all know we need help! lol I read and listen to books and audios about confidence, leadership, how to become more successful, improving my faith, improving communication skills, relationships, and how to live a life of happiness and freedom! Cant EVERYONE really benefit from this?!?! UMMM heck ya! Just to name a few of my favorites: Daren Hardy’s “Compound Effect”, Chalene Johnson’s Podcast “Build your Tribe” and “The Chalene Show”, Joel Osteens Podcast– You pick the sermon, they are ALL amazing and will help you in every aspect of your life!
  7. Find friends with same common interests and hobbies- I have lost friends along the way of my healthy lifestyle and fitness business.. Yea it sucks, BUT those “friends” I did have weren’t true friends or they would have supported what makes me happy! They mocked my healthy lifestyle and then went on with their own drama and unhealthy lifestyle. Thats completely fine and I would never try and change that.. but what I did find, was when I surrounded myself with people who loved what I did, were positive people, people who lift me up and the ones who have impacted my life the most! I want more of that!! If you feel you can’t find them, your not looking hard enough!! I promise they are out there!! Look in Facebook groups, Instagram, seriously, use social media in a good way!! One way is finding awesome friendships with people of similar interests and passion!

Yea I know only the first 2 Tips have ANYTHING to do with your bikini body, but… if you can put ALL these together, seriously, you will LOVE the way you look, think, and feel!! Its not all just about the physical appearance!! You can be as healthy as can be, but lack self confidence, motivation, support, etc.. you have to go beyond what your doing now to find the happiness for everything else.. and when you do find that happiness, you’ll realize the grass can be greener on the other side!

My Fitness Journey prepping for Figure Competition

Okay, this weekend was not as good as I wanted it to be! I rocked last week, was right on with my nutrition, did some heavy lifting, and have been so sore!! Then the weekend came and I had an extra cheat meal! YIKESS!!!! This is the time I need to be really strict!! I am about 14 weeks out and I need to get LEANNN!! 

Anyways, the extra cheat was good and worth it lol! Now, back in the game! 

I got my food prep done and it is so much easier being held accountable!! I am starting my next fitness challenge with my challengers online and I show them how I meal prep, so it keeps me right on track too!! Yes, even myself as a fitness coach needs a little accountability too!!

 I am going for pretty much all chicken this week! Lots of green beans, Brussel sprouts, red skin potatoes, sweet potatoes, and fresh berries!! I have my Shakeology for a meal I will add my peanut butter to it along with Recover protein to help with muscle soreness post workouts, so thats another meal I don’t have to worry about that I know I’m getting lots of dense nutrition!! 

 As I prepped and prepared for the week, I kinda had a little fun with some ingredients I had here.. all healthy but a perfect treat to help those cravings when you got a sweet tooth!! 

Here is my newest recipe for my:

  Chocolate Shakeology Truffles!!

Whats really cool about Shakeology is it is a health shake meal replacement, but you can do so much more than just plain shakes to drink!! Turn those superfoods into a healthy alternative to those chocolate cravings!! This is what helps me stay on track, consistent with my healthy eating, and progress to those big goals I have!! 

Since I’m prepping for my show, I gave most away, but saved 3 for when Im in need lol!!

Ingredients:
  • 1 scoop Chocolate Shakeology
  • 1/2 scoop Beachbody Performance Recovery (or chocolate protein powder)
  • 1/4 cup Almond Flour
  • 1/4 cup Coconut Flour
  • 3 TBSP Blue Agave
  • 3 TBSP Almond Milk
  • 1 TBSP Coconut Oil
  • 1 TSP Vanilla Extract
  • 1/2 cup Soy free, gluten free, dairy free chocolate chunks (found in organic section in grocery store– I use ENJOY LIFE brand)
Directions:
  1. Mix first 8 ingredients together in bowl
  2. Heat last ingredient (chocolate chunks) in pot on stove until melted (or in microwave- approx 2 min)
  3. After first 8 ingredients are mixed, make balls about 1 inch in diameter. Place on cookie sheet on parchment paper
  4. Put balls in fridge for 15 minutes
  5. After chocolate is melted, take balls out of fridge and dip using spoon or toothpick so the chocolate covers a light layer around ball and place back on parchment paper. 
  6. Put balls back in fridge for 10 minutes
  7. If you have remaining chocolate, you can drizzle lightly across balls to add decoration! Make it fancy 🙂 I used a sandwich baggie and added the rest of the melted chocolate in the bag and took out all the air. Cut a very small cut on the corner of the bag so the chocolate slowly drizzles out!
  8. Put back in fridge for 5 minutes
  9. Serve and enjoy!!

Chipotle Chicken Taco Salad

There is nothing better than a good ol Spicy Taco Salad!! Making it healthy… even better!! There is always healthy alternatives to make sure you are satisfying your cravings while reaching your ultimate health and fitness goals!! 
This recipe was absolutely amazing!! I hope you like it as much as I did!! Be sure to comment below if you liked it! 🙂 

INGREDIENTS:
Dressing:

  • 1/4 cup chopped fresh cilantro
  • 2/3 cup light sour cream or yogurt
  • 1 tablespoon minced chipotle chile, canned in adobo sauce
  • 1 teaspoon chili powder
  • 4 teaspoons fresh lime juice
  • 1/4 teaspoon salt
Salad:

  • 4 cups shredded romaine lettuce
  • 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts) Leftover grilled chicken works too.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced peeled avocado
  • 1/3 cup thinly vertically sliced red onion
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 frozen bag steam fresh kernel corn cooked
DIRECTIONS:
  1. To prepare dressing, combine first 6 ingredients, stir until well mixed.
  2. To prepare salad, combine lettuce and the remaining ingredients in a large bowl. Drizzle dressing over salad; toss gently to coat. Serve immediately. Store leftovers in the fridge – it’s just as good the second day!

Tip: Add a spoonful of adobo sauce for a spicier salad.

Valentine’s Day is not just about loving someone and giving gifts, its about LOVING YOURSELF!! Loving who you are on the inside and out! I will say I know many people (I am guilty of this too) who tend to be so worried about other people (spouses, kids, parents etc.) that they take care of them, but forget to take care of themselves or put themselves last and then you become more unhappy and miserable.  

If you cannot take care of yourself, how can you take care of anyone else? It is important for you to be healthy and take care of yourself to be that great role model, but also so you can be around for a hundred years!!! 🙂 

Clean eating is 80% of your results… How you feel on the inside and how you look on the outside! You can take away all the carbs or fats, but your body NEEDS these!!! In order to have your body in the best shape ever, you need to fuel it with the proper nutrients!! Thats where I come into play!! 

I want to help you learn some great tips on clean eating, how to grocery shop the healthy way  without spending tons of money…. I love budgeting.. I am a mom of 2 little boys and I like to save where I can! I also want to teach you what times are good to eat what types of food!! 

Its a process… its a journey, but it all starts with YOUR decision to get started!

Thai Shrimp and Rice Noodles

It doesn’t get any better than this!! My 4 FAVORITE ingredients (and maybe yours too) all in 1 recipe!?!? Yes, its going to be that simple!!!

So I’ve had Thai Chicken before (another recipe on my blog here), but this was just awesome, and I even took away the 1 ingredient that I didn’t want to use because its not “clean”.  So I did a trial and error, and it turned out to be a success!!

THAI SHRIMP AND RICE NOODLES

Ingredients:
  • Package of Rice Noodles (got in international section in grocery store)
  • 12 oz Shrimp (peeled and cooked according to package)
  • 1 Tbsp Natural Peanut Butter
  • 2 Tbsp Sriracha Sauce
  • 1 Tbsp Chili Sauce
  • 1 Tbsp Minced Garlic
Directions:
  1. Cook Rice Noodles according to package on back, strain when cooked and placed back in pan on stove on low-medium
  2. Cook shrimp according to directions on package
  3. In separate bowl, add Peanut Butter and 1/2 tsp hot water and stir.
  4. Add rest of ingredients (Sriracha, Chili, and garlic) to peanut butter mixture
  5. Add mixture into noodles on stove
  6. Add shrimp to mixture
  7. Stir and serve.
  8. ENJOY!!
Hope you love as much as I did!! This recipe is great with steamed broccoli!
