Baked Butternut Squash

I am one of those people who likes to mix up their veggies and not have just plain cooked or raw veggies with my meals. The more I can get creative, the easier I stay on track! So yesterday, I did my usual weekly meal prep (which looked awesome by the way), and did a little playing with my butternut squash!

Ingredients:

  • 1 package of cubed fresh butternut squash
  • 1/2 chopped onion (I used purple)
  • 1 cup chopped portobello mushrooms
  • 1 tbsp minced garlic
  • 1 tsp onion powder
  • 1 tsp cracked pepper
  • 1 tsp Himalayan Salt
  • 2 tsp EVOO (extra virgin olive oil)

Directions:

  1. Heat oven to 350 degrees F.
  2. Add EVOO to glass baking dish
  3. Add all other ingredients in dish and be sure its mixed
  4. Put in oven (without foil) and bake for 35 min (or until fork goes through squash without resistance)
  5. ENJOY!
