Garlic Parmesan Chicken and Spinach

This is one of my absolute FAVORITE low carb recipes that I have been using for years and has always been a hit with everyone I have shared this recipe with! I love a good meal where you get your greens and protein all in one easy dish! 


Serves 4

Ingredients

  • 2 tbsp Extra Virgin Olive Oil (EVOO)
  • 6 cloves minced garlic
  • 2 chicken breasts-chopped into bite size pieces
  • 1/2 tsp Himalayan salt
  • 1/2 cups Parmesan cheese
  • 1/2 cup fresh chopped Portobello mushrooms
  • 2 cups fresh spinach

Instructions

  1. Heat pan with 1 tbsp EVOO on medium heat and add garlic and mushrooms. Saute’ for two minutes until Spinach is starting to wilt. Set aside.
  2. In the same pan, add 1 tbsp EVOO, chicken pieces, salt, and cook until no longer pink in the middle.
  3. Add parmesan cheese and stir until the chicken is coated.
  4. Add garlic and spinach back in with the chicken. Cook and stir for 2 minutes.
  5. Serve by itself or over whole wheat pasta

    Do you have the nutritional breakdown and serving sizes?

    What is the serving size? A red? Or a cup? I have 4 breasts so I need to double.

      That doesn't make sense compared to the 21DF measurements. And the chicken breast would have to be huge for 2 breasts to be 4 servings of meat.

      Lindsey, yes 4 oz is a serving size of chicken. I do use larger breasts and cut them in half to make 4 oz per serving 🙂
