Crock Pot Chicken and Black Bean Tacos

Over the weekend at our Coach Leadership Retreat, we had all the coaches make their favorite meals! One of my favorite dinners was this! I need easy meals that I do not have to prep a lot for so I am not wasting my entire day cooking! I love crock pot recipes because you literally throw in the ingredients in and walk away! 
So here it is.. EASY, HEALTHY, YUMMY!!!

1 lb chicken breasts 
1 12 oz can of black Beans
1/2 cup fresh salsa 
1 packet taco seasoning
1/3 cup water
1/3 cup cream cheese

Add all ingredients except cream cheese in crock pot and cook on low 6 hrs or high 4 hrs. Shred chicken in crock pot with 2 forks, pulling the chicken apart.
Add cream cheese in 20 min before serving and stir until melted.

I serve mine with greek yogurt, shredded cheese, lettuce/spinach, and anything additional you would like to add! I also use whole wheat shells, but whatever your preference is will work!

Fruity Oatmeal Bake

Fruity Oatmeal Bake

Over the weekend, I was at our coach retreat, we had lots of  great meals! Of course health and fitness coaches have to focus on food!! I felt like I was eating the entire time, but it was all healthy! Lots of great ideas for recipes, so now I get to share with you!
Breakfast is my favorite time to eat, and also the most important!! My goal is to find the easiest, but healthiest and satisfying recipes to make everyone’s life simple!

1 1/2 cups dry oats
1 1/2 almond, soy, or skim milk
1/2 cup slivered almonds
1/4 cup dry cranberries
1/8 cup chopped walnuts (finely chopped)
1 green granny smith apple unpeeled (chopped into cubes)
1/2 tbsp vanilla extract
1.5 tbsp pure maple syrup
clean cooking spray (I use pam)

Combine all ingredients in a medium size mixing bowl

Mix together and put in a 9 in round pan after spraying with cooking spray

                                           Bake in oven @ 400 degrees for 40 min uncovered

 Remove and let cool off for 5-10 min and enjoy!!

Dream Team Coach Weekend Retreat

This weekend, the Dream Team (yes, I am part of the #2 team in the Beach Body Company) and as a part of our training, we all got together for a weekend getaway!  We went to Deep Creek, MD and let me just say how amazing it was to finally meet so many of my fellow coaches that I talk to all the time, but had never met! It is such a blessing to be a part of this team and have the ability to have training and work as a team so we can be better leaders and share our knowledge with others so we can all be successful with our health, and business!
I became a Beach Body Coach so I can not only have that financial freedom and stay at home with my children, but also so I can teach others what tools were given to me to be a successful health and fitness coach, wife, and mother! This is not just about working for a company.. Yes, it does mean a lot.  But the most important part of what I do is sharing my passion with others to help motivate them and mentor others and continue being a role model for my family!
We arrived to Deep Creek on Friday and had the opportunity to relax and get to know one another, share different ideas from each other, and build even more of a great relationship with everyone!

We were the first to arrive and it was so beautiful with the lake behind us and leaves changing into beautiful colors! Fall is definitely here!!

I finally met my coach on my team Forever FIT for the first time! This girl is amazing and was one of my challengers who had an amazing transformation!!

Here are all the Dream Team Coaches that attended the retreat! Lots of great leaders and motivators! 

Although you will see we had lots of fun moments, we did get serious and have training  sessions..

We learned about different areas in our business that we can improve on to better ourselves as leaders and coaches!

We are driven, and passionate about what we do.. when its time to focus, we put on those thinking caps 😉

Alright, along with our workout, we decided to have even more fun and prepare you all for an awesome surprise!!

Nothing better than getting into some yummy food to enjoy after a great workout!

Some Kale salad, Cucumber Salad, and the amazing chicken and Black Bean Tacos!! They are sooo easy to make, and yet so satisfying!!

Here was my lunch for Saturday also.. Lots of great choices.. I made my Quinoa and hummus layered dip which I ate with Black Bean chips, more quinoa salad, Kale salad, and fresh fruit!

 It is so crazy how so many of us never met each other before this weekend, but we were together and it felt like we knew each other forever!!

Our leader of the Dream Team Melanie Mitro! Such an inspiration to us all and so many others! She is WHY we are all here today in the position we are! We are all so grateful to have her as our mentor!

A Day in My Shoes as a Mommy and Beach Body Coach!

I want to give you a little idea of how I spend my day.. This is not including working my job as a nurse, but as a Beach Body Coach and as a Mommy! This is my life and I enjoy every minute of it!! I love that I can be  my own boss in my business, and work at my own pace! I can be at home with my kids, and enjoy them growing up!

We actually woke up at 7am.. I swear my kids have an alarm in their head! I got them downstairs and we made breakfast!

I make a healthy breakfast that includes protein, good source of carbohydrates, and simple carbs to get your body revved up for the day!!

These Protein Berry Pancakes are made with egg whites and oatmeal, vanilla, and cinnamon! You cook it just like a pancake and top it off with fresh fruit and drizzle raw honey or agave nectar to give it a little extra flavor!
This is a great breakfast that even the kids love!

Ok we are sooo getting into the Halloween Spirit!! ARE YOU?!!?

After breakfast, I took the boys to day care, so I can work some with Beach Body.  I have a very busy month, running Challenge Groups, Apprenticeships, Cup Challenge, and working a lot with my coaches, along with keeping up with my business center and my hubby’s! So kids went to play and learn while mommy does some work at home! I was able to focus and get lots done!!

Got in my workout Turbo Fire (one of my all-time FAVORITE workouts), and burned some calories!
Of course, to get me going, I use my E&E to give me some extra energy!

After my workout, I got my second meal in… SHAKEOLOGY! My favorite meal and also the healthiest! I get all my nutrients I need that I do not normally get from my every day meals! Shakeology helps with my cravings, energy level, immune system, digestive system, and heart health! I am a huge chocolate fan, so what better way to help your cravings, than actually eating chocolate, but in a healthy way!?  Since, I drink Shakeology, I actually do not even need a mult-vitamin, because my 23 vitamins and minerals are in every shake!

One of my favorite Shakeology recipes is Vanilla Almond Fudge!!

1 scoop Chocolate Shakeology
12 oz ice
8 oz almond milk
1 tbsp Almond butter
1/2 tsp cinnamon
1/2 tsp vanilla extract

I was able to get some work done and of course before you know it, lunch is here! I feel like all I do is eat half of the time lol! But I am definitely keeping my metabolism going that is for sure!!
For lunch, I had a HUGE Greek Salad!! I add lots of feta, kalamata olives, and by the time I add those in, my calories are about ran up for that meal!! I also make a home made Greek Dressing that is in my Clean Eating Recipes tab! It is soooo absolutely easy to make and amazing in taste!!
Back to work I go.. I had phone calls with coaches and potential customers.. Read my personal development, which not only helps me and my business, but me as a person! My job is so much fun! I communicate with lots of people who want to be healthy and have the same hobbies I do! It a happy environment and love it!  I checked in with all 4 of my challenge groups and made sure they are all on top of things!! 
As I finish up with my work, time to pick up the boys and go to the pumpkin patch to enjoy QT with the family!! The boys loved picking pumpkins (although they wanted all of them lol) and set them out outside! On my way to the pumpkin patch, I ate my snack.. Raw peppers and hummus and a light string cheese!! Perfect for the car ride!!

I love that my Beach Body job gives my the ability to stop what I am doing, to take my kids places and spend time with them as I need! I have no one to answer to and I make my own hrs and work! I will not be that mother who is working so much, she misses out on opportunities with kids and holidays! Not anymore at least! As a nurse, I was working 12 hr days, every other holiday, lots of weekends, and missed out on lots.. I now am part time, and 1 holiday a year with my nursing job.. With Beach Body, I work when and where I want!
My kids come first and I am soooo glad that I can finally show it!!
Ok dinner time!!

 How about some Black Bean Burgers on 100% whole wheat buns and baked Parmesan Zucchini!! So it was my first time making the Black Bean Burgers and the taste was great! I honestly was not a fan of the texture though.. I think it was because I am used to biting into a burger that is thicker and harder to bite down on and chew, rather than soft beans that are already mashed..
I guess my black beans will stay in my chili and black bean, corn, and edamame salad!!

 After dinner, clean up, kids for a bath, and story time, and relax time!! It was a great and successful day, and ready to hit the sack for another great day tomorrow!!  Kids to bed at 9pm, and time to check in with my groups one more time before I hit the sack!!

As a mommy of 2, 2 1/2 jobs (also a school nurse relief), and a wife… I still make time for what is important to me.. My health! If I do not stay healthy, my husband and kids are most likely not going to make the healthy choices that I would.  My husband does not cook, so they would probably live off of cereal and mac n cheese!!
I have to be a role model and lead by example, how to live healthy, and successful, so they can grow up and do the same!

Asian Chicken- Healthy version

Asian Chicken

1.5 lb chicken
1 1/5 Tbsp minced garlic
4 Tsbp Brown Sugar
2 Tbsp EVOO
4 Tbsp Soy Sauce (low sodium or use braggs liquid aminos)
4 Tbsp chicken broth (low sodium)
1/2 tsp brown sugar (light)
1/2 tsp crushed red pepper
2 Tbsp corn starch (in 2 tbsp water – do not add until you add sauce to mixture)
Cut raw chicken into 1 inch cubes and bake in oven @ 350 degrees for 25 min
Then put chicken in large pan and add minced garlic and 2 Tbsp brown sugar to cook onto chicken on medium high
Add sauce on low heat for 15 min. or until thick

Make sauce:
In a mixing bowl, add EVOO, chicken broth, soy sauce, 2 Tbsp brown sugar, crushed red pepper together.
Don’t forget to add the corn starch mixture after adding the sauce to thicken your sauce!

Serve on top of brown rice or Quinoa! Oh, and definitely broccoli as a side!! 
If you are having a craving for Chinese food, this is so what you should replace it with!! My family is obsessed with this meal and pretty sure we can live off Asian Chicken!!! They are simple steps and does not take too long to make!! 
*If you want to cut back on a little time, I even cook my chicken in the pan instead of baking it for 15-20 min, but just make sure you drain the juice before adding the garlic and brown sugar!

Salmon with Lemon-Maple Glaze


  • 2 tablespoons fresh lemon juice
  • 2 tablespoons pure maple syrup
  • 1 tablespoon cider vinegar
  • 1 tablespoon EEVOO (extra virgin olive oil)
  • 4 (6-ounce) skinless salmon fillets 
  • 1/2 teaspoon Himalayan salt 
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray 

  • 1. Preheat broiler on high
  • 2. Combine first 4 ingredients in a large zip-top plastic bag. Add fish to bag; seal. Refrigerate 10 minutes, turning bag once.
  • 3. Remove fish from bag, reserving marinade. Place marinade in a microwave-safe bowl. Microwave at HIGH 1 minute.
  • 4. Heat a large ovenproof nonstick skillet over medium-high heat. Sprinkle fish evenly with salt and pepper. Coat pan with cooking spray. Add fish to pan; cook 5 minutes. Turn fish over. Brush marinade evenly over fish. Broil 3 minutes or until fish flakes easily when tested with a fork or until the salmon is to your liking!!
  • I enjoy this with a serving of baked asparagus and 1/2 baked or sweet potato!

How to grow a successful business as a Health and Fitness Coach!

So as a Beach Body coach, we have lots of incentives from our company.  We are given the opportunity to team up in groups of 5 coaches (I have my own team members on my team, but you can chose any coach in the company to group with) and join the CUP CHALLENGE! What this is, is teaming up, and learning to grow our team by going out there and trying to help lots of people!
I am SOOOOO beyond excited and proud to say our team FOREVER FIT is #1 this week out of over 100,000 Beach Body coaches! I am the founder of FOREVER FIT and have the best coaches int he world! We have become so close and it is seriously like a 2nd family! My coaches are so motivated, energetic, and willing to help as many people as they can! It is all about changing lives!

HOW I get to the top and help people is by running challenge groups.

What is a Challenge Group??
A challenge group is a 30, 60, or 90 day challenge that I run and hold in a closed group on face book.  No body except the challengers can see the group.  What I do in my groups is provide challengers with lots of great information, such as nutrition and fitness tips, meal plans, and I do lots of motivational posts to keep you motivated and accountable so you can reach your ultimate fitness and health goals.
It takes 21 days to get into a habit… My job in 21 days is to get you to where you are in a routine and feel that need to exercise, and eat healthy, and have less cravings and more energy!

What do I need to join a fitness challenge?
You need just a few things to get you started on your fitness journey..

#1. A beach body program– You can chose any exercise program that suites you, and if you are unsure, my job is to help you find what is the best fit for you.  The programs vary in intensity, and whether you like cardio, weight training, dancing, or a variety, we can chose depending on your preference.  Each exercise program comes with a meal plan that you can either follow, or just use as a guide.  You also get a schedule, so you know exactly what workout to do and what day! How simple right!? That part is already done for you!

4. Work from home- For me as a mother, I was dreaming of working from home, doing something I loved, while not having to take my children to daycare or leave them.  That extra money to pay for babysitters and daycare, SAVED!  This also means you can wake up later, go to bed earlier, and not buy extra clothes to work in, because as we speak, I am in my PJ’s!! 
5. Financial Freedom- Are you looking to pay off your debt, your cars, even your home?? Are you even looking to have extra money for Christmas for the family?  Let me tell you, you can make 200$/week, you can make 500$/week,  or you can make 2000$/week, this all depends on what you want! I have officially gone part time at my nursing job, and make more now as a health and fitness coach with Beach Body, than what I do as a Registered Nurse with a 4 yr BSN degree!  Thanks to Beach Body, my Christmas is taken care of in just 2 weeks of working as a fitness coach and I mean I can buy them what I want without checking my back account to make sure there is money is there.  What an amazing feeling this is and a relief for my family!
6. Opportunity to Travel-  When you work as a coach for Beach Body, like I said earlier, they love to support you and praise you for your hard work! So what kind of traveling?? Here is a great example! 
I am taking my husband and I on a Caribbean Cruise in March called the S.S Beach Body 2014 and it is officially paid for! How?? Because as I earn success club points (you earn points for orders made through your website), they actually GIVE you FREE $$ to help pay for your trip! I have earned enough that it is paid for, thanks to BEACH BODY! 
In June, I will be going to SUMMIT in VEGAS for a training and that ticket was paid for because Beach Body rewarded those who worked hard to help others.  All of these trips provide us with awesome training to become better leaders and be more successful! 7. Accountability to be Healthy- I love to eat healthy and exercise, but sometimes it gets tough and you want to give up… I have found that being a Beach Body Coach, I now can easily stick with my clean eating and exercise regimen because I know I am acting as a role model for people and I have to practice what I preach!  What better way to hold yourself accountable than to coach and help others along your own journey!  What an awesome job to do what your already doing, but make a difference and an extra income while doing it!? The great thing about this opportunity is you do not have to already be at your goal weight!  You can be just starting your journey… nothing better than being surrounded by motivators to help you on your way!
8. Grow as a person- So I am not the type to take time and read books, because I just feel like I do not have the time.  I have found that I now read more than I ever have even during college because I am now reading books that make a difference not only in my career, but in my life in general! Personal development is huge for me and my coaches because we learn how to stay consistent, motivated, and also how to grow as a leader!  Since I started coaching (I was still on my journey to my own transformation), I did a lot of research on clean eating, and different recipes for cooking for my family.  Since I knew I was going to be teaching others how to live a healthy lifestyle, I knew what I had to do. I now have books upon books, and I have made my family into a family that loves to eat healthy, and I now can enjoy every minute knowing that we are setting a great example as parents for our children!

9. Meet new people- I am such a people person and let me tell you how amazing it feels to build long lasting friendships with people that have so much in common with you! You love to do the same things… help people with learning how to live healthy lifestyles, live a healthy lifestyle on your own by eating clean and exercise of course!!

Chocolate Shakeology Coconut Oat Cake

Chocolate Shakeology Coconut Oat Cake Recipe

Preheat oven to 350F

2 cups quick oats
1/2 cup Shakeology
1 1/2 tsp baking soda
1/2 cup raw honey
1 cup water
3 egg whites
1/4 cup unsweetened shredded coconut

Mix everything in a bowl, then pour into a springform pan. Bake at 350 for approx 18mins, then cool completely in the pan. Once cool, cut into wedges. Makes 16 servings.

Optional: sprinkle with additional coconut prior to baking

I know there are other people with the same sweet tooth I have and this is a perfect way to cook for the family and friends and keep everyone healthy and giving them the proper nutrition!

How can you relieve your STRESS in a HEALTHY WAY??

So today is the perfect day to question everyone on how you relieve your stress!
There are different ways, some healthy and some not-so-healthy ways… I was bad and went the unhealthy way out, but could have been worse!!
So I come across so many people (as I also was guilty of this at one time) who are huge STRESS EATERS!  Talk about killing those goals you have right?? I know we have stressful moments, but you have to keep in mind you still have goals! As much as we stress each day, if we rely on food to comfort us in our stressful times, how are we ever going to reach our goals?!

When you are feeling the need to munch on food just because you are stressed, or even bored, DRINK WATER!! Realize you are not hungry and you do not need the extra calories!! Soon enough, you train your body into not needing to eat those extra snacks or meals and you can enjoy being healthy and happy with your appearance and health!

One thing I did today was STRESS SHOP! I know some of us have a slight issue with loving clothes and shoes!! I personally love to shop for workout clothes!  Although shopping can be bad, especially if you do it too often, it can mess with your bank account and even family! That is a NO NO!! Do not let your stress get the best of you! Allow yourself to window shop, or give yourself a limit before you go, so you do not binge shop.  For me, I was successful and thankful that I do not live near Macy’s or Banana Republic and I can stick to my good ol Target!!

What is the best thing you can do to relieve your stress?!? Of course… EXERCISE!!!
Your body releases endorphins which cause you to by happy! You will gain energy, feel a sense of accomplishment!! What better thing to do when you feel bad is to make yourself feel good!!? The hardest part is getting started.. Once you tell yourself it will be worth it.. it will get you closer to your goals.. the rest will come easier! Do it for that moment that you realized your clothes are fitting lose, you are getting
compliments about your weight loss or the difference in your definition. The more you do to prevent stress, the less stressed you will be! Make yourself happy, confident, successful with your goals! You are the only person that has total control of your situation and the outcome of your situation.  It is up to you to be happy, healthy, and successful..
It is up to you if you are ready to commit to yourself and start reaching high for your achievements!
